Hi Sarah, Well, I’ve been so busy making cakes for my customers I haven’t had time to bake some of the things I want to bring to AZ yet but tomorrow is a free day for me so I’m try out two of your recipes. The Peach Shortbread and the Chewy Ginger Cookies. They both sound wonderful. I’ll let you know how they turned out for sure.

Sarah, I live above 7,400 feet and I’m always having to adjust my baking recipes. If I may ask, at what level are you at. Hope that makes sense. LOL I would just hate to use to much sugar and or Baking Soda and not enough Flour having the cookies end up in the trash. I’m originally from Arizona, I moved to the mountains of Colorado a few years ago and all of my recipes in my cookbook, well, they are now, all wrong. :- ( Anyhow, I’ve got the butter out of the fridge, sitting on the counter overnight and in the morning I will be making your Chewy Ginger Cookies. I’m actually pretty excited about it. I’ve never made Ginger Cookies before and tonight I just found out that my man likes Ginger Snaps sooo, I’m thinking he will like these cookies as well. Okay, back to the question at hand… Altitude please…. LOL Thank you Sarah

I’m not sure the exact altitude but I live in Nashville, TN and know those cookies have been made successfully in Indiana (where I’m from), Ohio (college), and the southeast. I don’t know anything about baking at altitude though, sorry! Good luck!

Good Morning Sarah,
I just finished baking the first sheet of Chewy Ginger Cookies. Because of the higher altitude of 7,400 ft. I did decrease the flour by 1/4 cup, decreased the baking soda down to 1 tsp. and the sugar down to 1 3/4 cup. I couldn’t ask for a better looking cookie!! Taste pretty darn good too! Thank you for posting the recipe.
Would you mind if I post the recipe I revised for High Altitude Baking on my Blog?
