School starts this week. While I’m bummed to have vacation come to an end, at least this will take me one semester closer to graduation! And, I am going to use this as an opportunity to introduce a new part of my Menu Plans… lunches! I’ve been taking a lunch with me to work and/or school for close to four years now since college graduation, and I’m starting to get sick of the normal elementary school-style lunch: sandwich [or leftovers] + veggie + fruit + yogurt + snack for the AM/PM depending on the day… blah. Ben usually takes leftovers in his lunch, and I do the same from time to time. However, I don’t always have access to a microwave on campus so that isn’t always an option. So what I am going to try to do this semester is make ahead one cold, lunch-specific main dish that we can eat a couple times during the week. I suspect this will help me alleviate my boredom with the good ‘ole lunchbox and making packing a lunch less of a chore.
Week of January 10
Monday: couscous salad
Tuesday: Mom’s meatloaf
Wednesday: out to eat
Thursday: leftovers
Friday-Sunday: visiting friends…

I take my lunch to work every day, and unfortunately I’m pretty boring (but I love this lunch!): I take a salad with chopped fresh spinach, diced apple, chopped grapes (in the summer I use strawberries instead of grapes), toasted walnuts, feta cheese, and dried cranberries. I’ve been taking this lunch to work for the past 3 years, and I’m not yet tired of it π

I would eat out every day if I could–but lately I have been on a mission to do leftovers for lunch. They pile up and pile up and often get thrown away eventually and I HATE that! I am trying to make it more exciting though, by pairing the leftovers with something more fun, like a cool dessert or treat or something cheap that I can buy on the run.

I usually make a big salad. Lately, I have loved spring mix with chopped apples, clementines, and a chopped up clementine. Then a chopped up cheese stick. We have tons of chicken noodle soup from this weekend, so I’ve had some of that too.
You’re right, lunches can get boring.
