You know I love seeing your meal plans! Question, does the chicken and butternut squash stew have quinoa in it? If so, I’ve made it before and it is DELICIOUS!

it was actually inspired by your recipe amy! but i roasted the butternut squash and used a bunch of indian spices, fresh ginger, and chickpeas in the stew too. i’m sure your version is wonderful but i didn’t feel like steaming the squash so i roasted it and wound up using garam masala…it all got crazy from there, haha. it was dark when i made the stew so i haven’t taken a photo yet. hopefully it’ll still look good enough when i have a chance to do so in the light. getting dark before 5 is killing me!
