Apples and peanut butter go SO well together. I started typing just a minute ago about how they were a great childhood snack, blah blah blah–then erased it because I realized I eat apples and peanut butter as a snack or add on to a meal several times per week. And I am most certainly not a child! 🙂 When I found out that Envy Apples was one of our sponsors for #FreshTastyValentines, my first thought was: I don’t want to BAKE with a new variety of apples. I want to eat them by themselves, dipped in peanut butter. But a blog post about that would be pretty boring. So I went with the next best option: pancakes.

If you  know me, you know I’m a breakfast girl. And pancakes are my breakfast food of choice. Homemade or at a restaurant–it doesn’t matter… and I must say, sharing a pancake recipe today is especially fitting because February 5, 2016 is the eight year anniversary of our first date: breakfast at Bob Evans, where we both ordered cinnamon pancakes [Ben copied me because he was too nervous to figure anything else out to order! What a guy! :)]. I’ve already made several versions of apple pancakes before–but then, yesterday, I had the genius idea to play up the apple PEANUT BUTTER element. And voilà–these pancakes were born.

They’re not just your average pancakes–these babies are thick, hearty, and filling. Adding peanut butter to whole wheat pancakes will do that to ya, and stirring in some protein-rich Bob’s Red Mill Hulled Hemp Seed Hearts [also another fabulous #FreshTastyValentines sponsor] makes them even better! These pancakes have the perfect blend of sweetness and nuttiness. I topped mine with some easy sautéed cinnamon apples and maple syrup, and oh man… what a breakfast! I used a combination of Envy apples and Gala apples in my apple topping [since Envy apples are a Gala-Braeburn hybrid, and I wanted to save one to try on its own]. Apple Peanut Butter Pancakes with Sautéed Cinnamon Apples

  • Servings: 2-3

pancakes adapted from my Go-To Pancakes

Ingredients:

for pancakes

  • 1/2 cup white whole wheat flour
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 cup Bob’s Red Mill Hulled Hemp Seed Hearts
  • 3 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 1/4 cups skim milk, room temperature
  • 1 egg, room temperature
  • 1/4 cup creamy natural peanut butter [I used a honey roasted peanut butter], melted in the microwave for 15 seconds if too thick to stir
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1/2 cup finely diced apple [I used Envy Apples] – peeled or unpeeled depending on preference
  • butter or canola oil, for cooking
  • maple syrup, for serving

for Sautéed Cinnamon Apples  

  • 1 tablespoon butter
  • 3 medium apples, thinly sliced [I used Envy Apples and Gala Apples] – peeled or unpeeled depending on preference
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 cup water

Directions:

In a medium bowl, stir together flours, hemp seeds, baking powder, and cinnamon. In a small bowl, whisk together milk, egg, peanut butter, butter, and vanilla. Pour wet ingredients over the dry and fold together gently to incorporate. Stir in apples until just combined. Batter may be lumpy. Let batter rest for 10 minutes.

While batter is resting, heat griddle over medium heat for cooking pancakes.

In a separate 10 inch skillet, melt butter over medium heat. When melted, add apples and top with cinnamon, vanilla, and water. Stir to combine, then cook over medium heat, uncovered, until liquid starts to bubble. Reduce heat to medium low and cover, stirring occasionally, until apples soften and get slightly caramelized and juices thicken. Then reduce heat to low to keep warm while pancakes cook.

Pour batter onto hot skillet in 1/4 cup increments. Cook for two to three minutes on the first side until bubbles form, then flip and cook on other side until golden brown. Batter makes about 14 pancakes.

Serve pancakes with Sautéed Cinnamon Apples and maple syrup.

Notes:

You can use all-purpose flour in place of the whole wheat and white whole wheat flours, or use all white whole wheat flour too.

If you don’t have the hulled hemp seed hearts, you could substitute in flax or chia seeds, or some chopped nuts, or just leave them out.

Chopped Thai Chicken Salad

Chopped salads are my favorite salads… they’re just so fun to eat! This version combines chicken, cabbage, carrots, and mango but the peanut butter based dressing takes the cake by far! 🙂

Salad in January? So cliched, I know. Especially since last week with that Amish Cheeseburger Soup I talked about how we didn’t need to just ‘eat healthy’ in January. Ummm, right. 🙂 But still, I stand by what I say… and salads are definitely part of our normal meals. Normally, our salads are pretty standard: romaine/spring mix/spinach, carrots, peppers, cucumber, maybe tomatoes or mushrooms or something else based on what’s in season. Dressing, yes… croutons, cheese… maybe. But never anything too exciting, unless I make a salad for our main course. Then, it is GOOD STUFF! And this salad is good stuff. 🙂

Thai Chopped Salad: a hearty winter salad everyone will love!

Every bit of this salad is incredible, and it’s perfect for the winter since it’s so hearty and filling, and isn’t your typical bunny rabbit salad fare. 🙂 This salad is basic and fancy all at once, with a basic chicken-cabbage-carrot mixture dressed up with mango, cilantro, green onions, and peanuts. But the best part of this salad by far is the peanut butter-based dressing… it’s just SO flavorful, tangy, and fantastic. The salad easily serves four, so what we do is divide everything in half and eat half for dinner, and save half for lunch the next day. Leftovers will do okay in the fridge for the next day, but for best results combine the salad and dressing immediately before serving–hence dividing everything in half before serving. Hope you enjoy it as much as we do!

Chopped Thai Chicken Salad

  • Servings: 4

Ingredients:

for the salad

  • 2 cups cooked and shredded chicken [I used some from a chicken we roasted earlier in the week, but a rotisserie chicken would be great too!]
  • 3 cups shredded cabbage [I’ve used green, red, and a combination]
  • 1 1/2 cups shredded carrot [about 3-4 medium]
  • 1 1/2 cups chopped mango [or green papaya if you can find it]
  • 1/2 cup cilantro, chopped
  • 1/2 cup green onions, chopped [about 1/2 a bunch]
  • 1/2 cup peanuts, chopped

for the dressing

  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons honey or sugar
  • 1 tablespoon lime juice
  • 1 tablespoon canola oil
  • 1/2 teaspoon fish sauce
  • 2 cloves garlic, minced
  • pinch of cayenne
  • 1/4 cup peanut butter [natural works great–just microwave for 10-15 seconds to melt a little if it’s too hard to combine]
  • 1/4 cup water

Directions:

Combine chicken, cabbage, carrots, mango, cilantro, and green onions in a large bowl. Toss to combine, then stick in the fridge while you prepare the dressing.

In a small bowl, whisk together soy sauce, vinegar, honey, lime juice, oil, fish sauce, garlic, and cayenne. Add peanut butter and water and whisk again until smooth.

When ready to serve, pour half of the dressing over the salad, then sprinkle with the chopped peanuts. Add more dressing to taste, or save for later–the dressing will keep in the fridge for up to a week. Leftovers will be okay in the fridge for the next day, but for best results combine the salad and dressing immediately before serving.

Addictive, sweet, chewy, easy no-bake bars. Can you go wrong with marshmallows, peanut butter, butterscotch, and graham crackers? I don’t think so! You need to try these… and SOON.

I am always more ambitious with holiday baking, decorating, and cards than is ultimately reasonable. Case in point: this year I made our Christmas cards. Half got sent out earlier this week, the other half will [hopefully] go out this weekend. Sorry family, your cards were last. Ha. To compensate for the card making extravaganza of 2015, this year we decided not to get a tree… mainly because Isa the kitten would probably climb it and knock it down. Seriously, that cat has mad climbing skills. She scampers up the support poles in our living room like they’re nothing [and they already have a rustic look to them, so I’m not concerned with kitty claw marks. If she was destructive towards our furniture, that would be another story. I have no tolerance for that!]. The world is this kitten’s toy, and a tree would be no exception. Hopefully next year she will have matured a wee bit! 🙂 One area that I haven’t skimped in so far is Christmas baking! I made a mess of the kitchen many times over last weekend, and this weekend will be no exception. The best treat I made–by FAR–were these fairly unassuming looking No-Bake Peanut Butter Marshmallow Bars.

Brown food never looks that appealing to me, so don’t let the photos turn you away from these babies. If you make one new last-minute sweet treat this Christmas season, let THIS be it. They’re every bit as ooey gooey, sweet, and fantastic as they sound. The ingredient list is short and sweet: butter, peanut butter, butterscotch chips, marshmallows, and graham crackers, and the preparation is incredibly easy. Melt, stir, spread, refrigerate, cut, eat, and enjoy.

This treat is well worth the sugar rush, I promise… and with one batch making an entire 12×18 inch jelly roll pan full of these yummy bars… you’ll have enough to feed the neighborhood and yourself for days. 🙂 I’m seriously pondering making another batch this weekend just to have “extras” around! Word of warning though, especially for those of you experiencing higher than average temperatures: these can get pretty soft at room temperature so plan ahead to store in the fridge… they are delicious cold!

No-Bake Peanut Butter Marshmallow Bars

  • Servings: 12x18 inch jelly roll pan

adapted from my friend Susan and How Sweet Eats

Ingredients:

  • 1/2 cup butter
  • 3 cups peanut butter [I used 2 cups regular, 1 cup no-stir, non-refrigerated natural peanut butter — Peter Pan brand that’s pretty good for baking]
  • 1 – 11 ounce bag butterscotch chips
  • 2 – 10.5 ounce bags mini marshmallows
  • 4 cups graham crackers, roughly broken
  • sprinkles, optional

Directions:

In a large pot set over medium-low heat, melt together butter, peanut butter, and butterscotch chips. Stir constantly until everything melts–about 8-10 minutes. If a few chips are stubborn, that’s okay.

Remove from heat and let cool for about 10 minutes. While mixture is cooling, line a 12×18 inch jelly roll pan with parchment paper. Alternatively, you could use a 9×13 inch pan for thicker bars, or even some mini muffin cups greased well or lined with paper liners [but I haven’t tried these options].

Stir in 1 bag of marshmallows and half of the graham crackers until all are incorporated, then stir in remaining marshmallows and graham crackers. Turn out onto jelly roll pan, then use a spatula to press flat and smooth out. Top with sprinkles if desired, then refrigerate for 1 hour to set. Cut into small pieces and store in the refrigerator before serving. Enjoy!

If you like pumpkin pie, or chocolate, or peanut butter, you will LOVE these little bites. They are the absolute perfect blend of pumpkin and everyone’s favorite chocolate-peanut butter treats. I just can’t get enough of them! Except that I can. They are so rich and full of delicious [and SIMPLE] ingredients that one is more than enough. Until a couple hours later. 🙂

Whenever I can, I love to keep these no-bake peanut butter cup bars in the freezer. One day I was stressed and REALLY needed one of those bars. They’re good, but they’re uber sweet. Plus, it’s pumpkin season. Soooo, I chose one of the many recipes on Pinterest and hoped for the best. I love pumpkin but I just wasn’t sure how it’d go with peanut butter, ya know? Turns out… pumpkin + peanut butter + chocolate = LOVE x a zillion. 🙂 The filling tastes like a creamy, nutty pumpkin pie. I’ve never had pumpkin pie with chocolate, but now I’m tempted to add peanut butter to my pumpkin pie filling and drizzle it with chocolate syrup. It’s crazy talk, I know, but these are just SO good. You’ve gotta try them… they’d be a great secondary dessert for Thanksgiving or a great weeknight snack. 🙂 Enjoyyy!

Pumpkin Pie Peanut Butter Cups

  • Servings: 10

from The Lean Green Bean

Ingredients:

  • 4 tablespoons pumpkin puree
  • 4 tablespoons peanut butter [I used natural creamy but anything would work]
  • 1 1/2 tablespoons maple syrup [or other liquid sweetener like honey or agave]
  • 1 teaspoon chia seeds
  • pinch of pumpkin pie spice
  • 1+ cup chocolate chips [I used milk chocolate but semi sweet or dark or white would work too]

Directions:

On a small baking sheet, place 10 silicone muffin liners. Alternatively, you could line a muffin tin with 10 paper liners – but I think silicone works better for candy if you have it.

Stir together pumpkin, peanut butter, maple syrup, chia seeds, and pumpkin pie spice in a small bowl. In another small bowl, melt 1/2 cup chocolate chips for the base in the microwave. I always melt chocolate on 50% power in 20 second bursts, stirring in between, and always stop when some of the chips are still separated so as to not burn it. When you stir vigorously it melts them in.

Place 1/2 tablespoon of the chocolate in the base of each cup. Scoop 1 tablespoon of the pumpkin mixture on top of chocolate in each cup,  gently pressing down with a spoon to create a disk.

Melt remaining chocolate, then cover pumpkin layer with chocolate. If you run out of chocolate feel free to use more–I just barely had enough.

Freeze the cups for 30-40 minutes, then store in the refrigerator until ready to serve.

I don’t know about you, but I am SO ready for fall. I’m ready for all things pumpkin, falling leaves, crisp 50 degree morning runs, and curling up under cozy blankets. I recently heard that Pumpkin Spice Lattes will be at Starbucks really early this year–August 25 in some places. That, to me, is crazy. Summer’s still happening outdoor! While I won’t be loading up on PSLs [I’ll probably have 1-2 over the course of the season and then make some pumpkin spice syrup to enjoy with my coffee at home.] I can’t wait to bake up lots of yummy muffins to enjoy this fall.

I do make muffins year round, but there’s something special about warm muffins with your coffee in the fall. These bakery-perfect muffins combine two of my favorite things: peanut butter and chocolate. And the best part is that the peanut butter and chocolate are DOUBLED in this recipe… you’ll find them in both the muffin itself AND in the streusel. It’s double the love, y’all.

Peanut Butter Chocolate Chip Streusel Muffins

  • Servings: 12

Ingredients:

  • 1 1/4 cups all-purpose flour – divided
  • 3/4 cup brown sugar, packed – divided
  • 3 tablespoons butter
  • 1/4 cup + 2 tablespoons peanut butter – divided
  • 1/4 cup peanuts, chopped
  • 1/2 cup mini chocolate chips – divided
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda

Directions:

Heat oven to 375 degrees. Line a muffin pan with paper liners or grease with cooking spray.

In a small bowl, prepare streusel by combining 1/4 cup flour with 1/4 cup brown sugar. Use a pastry blender or two knives to cut in 1 tablespoon butter and 2 tablespoons peanut butter. Stir in peanuts and chocolate chips then set aside.

In a large bowl, beat together remaining butter and peanut butter for about 30 seconds or until combined. Add 1/2 cup of remaining flour, the rest of the brown sugar, half the milk, the egg, baking powder, and baking soda. Beat on low until combined, then add remaining flour and milk, mixing until combined. Stir in remaining chocolate.

Divide batter between muffin cups, filling about 2/3 full. Sprinkle with streusel topping then bake for 20-25 minutes or until toothpick inserted in the center comes out clean.

Cool in the pan for 5 minutes then remove to wire rack to cool completely.
