Black Bean-Pumpkin Soup

Updated March 30, 2014… so today, I was looking through some blog pics and realized I made a terrible error! The soup that had been pictured here was NOT this wonderful Black Bean-Pumpkin Soup, but rather a Minty Tomato Soup. Whoops! Somehow I mixed up my labels. Sorry about that! This soup is still delish no matter how it looks, but I wanted to come back and make it right with you. 🙂 Forgive me?

I hope you’re okay with another soup recipe this late in March! If you aren’t, look away. But be forewarned: you’ll miss some awesome soup. It was snowing in Nashville yesterday [not enough to stick, but still], so soup is entirely justified I think!

Earlier in the year, my mom texted me a picture of her dinner: a delightful orange-y colored soup. I asked for the recipe and received a text with a picture of the recipe, which I immediately made for lunch the next day. Yay for iPhones and technology! 🙂 That soup is the one before your very eyes now… a creamy, flavorful, filling Black Bean-Pumpkin Soup. I’ve made plenty of black bean and pumpkin soups in my day–but never together, and never this good. The soup is a cinch to throw together and definitely gets better as it sits. With just a hint of spice and a bit of sweetness, this soup is unlike any I have ever tasted. Next time I make it I will be sure to stock up on sour cream, green onions, and pumpkin seeds because the [unpictured] toppings are the very best part! Enjoy!

Black Bean-Pumpkin Soup

  • Servings: 8 servings/2 quarts

slightly adapted from a magazine via my mom

Ingredients:

  • 2 – 15 ounce cans black beans, rinsed and drained
  • 1 – 15 ounce can diced tomatoes, drained
  • 2 cups loosely packed spinach
  • 2 tablespoons olive oil [STAR Fine Foods Grilling Cuisine Cooking Oil is what I used; extra virgin would also work]
  • 2 medium onions, finely chopped
  • 1 jalapeno, deseeded [optional]
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 3 cups chicken [or vegetable] broth
  • 1 – 15 ounce can pumpkin puree
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon pepper
  • 1-2 tablespoons molasses or bourbon [optional]
  • sour cream, for topping
  • sliced green onions, for topping
  • pumpkin seeds, for topping

Directions:

In a food processor, combine black beans, tomatoes, and spinach. Process until smooth.

In a Dutch oven, heat olive oil on medium. Add onions and jalapeno [if using] and cook until soft. Add garlic and cumin and cook for another minute, until fragrant. Then stir in broth, pumpkin, vinegar, and pepper. Bring to a boil then cover and reduce to a simmer for 20 minutes.

Remove from heat and stir in molasses if using, then serve with sour cream, green onions, and pumpkin seeds as desired.

Sweet Potato Pork Quesadillas

Apparently February is National Sweet Potato Month! Who knew?! I know no better way to celebrate than with these awesome Sweet Potato Pork Quesadillas!

Please forgive my less than stellar photos. I am so over this winter weather, it’s really killing my photos! But anyway–these quesadillas are ridiculously good. Though they require a few extra steps than a usual quesadilla, since you have to cook the ground pork and saute some jalapenos, they are well worth it! These quesadillas are the perfect combination of sweet and spicy goodness. We’ve made them for dinner a couple times, but I can definitely see them as a wonderful party appetizer too. As you can see, I served them with quite a bit of sour cream and some sauteed jalapenos. I hope you enjoy them as much as we do!

Sweet Potato Pork Quesadillas

  • Servings: 4 meal-size servings, 8 appetizer servings

Ingredients:

  • 1 medium sweet potato
  • 1/2 pound ground pork [chorizo would also be a great substitute]
  • 1 1/2 teaspoons chili powder [ancho chili powder or chipotle chili powder also works well–but scale back depending on your tolerance of spice]
  • 2 cloves garlic, minced
  • 4 green onions, chopped
  • 1/2 cup cilantro, chopped
  • butter or oil, for cooking
  • 4 burrito-size flour tortillas
  • 2 cups cheese [cheddar, jack, Mexican blend, etc.]
  • sour cream, for topping
  • sliced pickled jalapenos [or saute a few fresh jalapenos]

Directions:

Prick a medium sweet potato all over with a fork and microwave until soft, about 8-10 minutes. When sweet potato is cooked, let cool for a few minutes and then remove the skin. Gently mash sweet potato with a fork, then set aside.

Meanwhile, heat a skillet over medium heat and cook pork with chili powder, breaking up with a wooden spoon until browned. Add garlic, green onions, and cooked sweet potato to skillet and stir together. Cook for a minute or so, then remove to a bowl. Stir in cilantro.

Wipe out the skillet and add about 1 teaspoon of butter or oil to the skillet. After a minute or so, add tortilla to skillet. Evenly top tortilla with 1/2 cup cheese and 1/4 of the pork mixture. Reduce heat to low. After cheese is melted, fold the tortilla in half over the filling and cook until tortilla is golden brown. Remove from pan and cut into four wedges. Repeat to make an additional 3 quesadillas. Serve with a dollop of sour cream and a few slices of jalapenos, if desired.

Broccoli Stuffed Loaded Potato Skins with Avocado Cream

It’s January! For many people, that means a [re]commitment to healthy eating. Sticking with a healthy diet can be hard. Since I am all for moderation of all things, instead of strict denial, I like to find healthier versions of my favorite treats. These potato skins are a prime example.

The regular version is loaded up with tons of cheese, sour cream, and bacon. This version, à la Ellie Krieger, features broccoli, Canadian bacon, avocado, and cheese. The perfect substitute! And perhaps, even better than the original?

While I love the usual loaded potato skins [and ate my fair share in college], this version with broccoli and avocado is just fabulous. They’re more filling and more of a meal-appetizer than an appetizer-appetizer. Make sense? I had forgotten just how good Canadian bacon was… salty and a little more gourmet than regular bacon. Gourmet may be a bit of an overstep, but I love its juicy, smoky sweetness. It pairs SO well with that avocado cream, which MIGHT be my new favorite thing! It’s like guac, but creamy and with just a hint of lime. The only change I might make to this dish would be to chop the broccoli up a little more after steaming it, but that’s just a minor thing.

Broccoli Stuffed Loaded Potato Skins with Avocado Cream [from Comfort Food Fix by Ellie Krieger]

Ingredients:

  • 4 small russet potatoes, scrubbed and dried
  • 2 teaspoons olive oil
  • salt and pepper
  • 2 cups chopped broccoli florets [4 ounces]
  • 2 ounces Canadian bacon, diced
  • 1/2 cup cheddar cheese, grated

for avocado cream

  • 1 avocado
  • 2 scallions, chopped [green and white parts separated]
  • 2 tablespoons sour cream
  • 2 tablespoons lime juice
  • 1/4 cup cilantro
  • 1 clove garlic
  • salt and pepper

Directions:

Preheat oven to 450 degrees. Pierce potatoes with a fork 8-10 times each, then wrap in paper towels and microwave until fully cooked, about 10 minutes. Remove and set aside until cool enough to handle, then cut in half lengthwise.

Scoop out all but an 1/8 inch of the potato flesh, reserving for another use. Brush the inside and outside of the potatoes with oil and season with salt and pepper. Place skin-side down on a baking sheet and cook until crispy and golden brown, about 20 minutes.

Meanwhile, making the filling. Steam the broccoli until crisp-tender. Add the Canadian bacon to a skillet set over medium-high heat and saute until crisp, about 4 minutes. Divide the broccoli and cheese equally amongst the potatoes

Lower oven temperature to 400 degrees and return potatoes to oven, baking for about 5 minutes until cheese is melted.

To make the avocado cream, place all ingredients except green scallions in a food processor and pulse until smooth. Season with salt and pepper to taste.

To serve, top potato skins with Canadian bacon, avocado cream, and green scallions.

Time: 45 minutes.

Yield: 4 servings.

Sweet Potato Chorizo Chile Mac

I’ve been making this Sweet Potato Chorizo Chile Mac for well over a year now since Joanne posted it, and have no idea why I haven’t blogged about it yet. It is AMAZING! It’s no secret that I like baked pasta, cheese, and Southwestern/Mexican food, and this dish fits the bill for all three of those categories. Saaaweeeet!

Or more accurately, sweet ‘n spicy. This version of chile mac features a hearty sweet potato sauce, some spicy chorizo sausage, and just enough cheese to be yummy but not too indulgent/unhealthy. I mean, I love a super cheesy dish as much as the next girl, but there are other flavors I like too… and this dish brings it! If you have all the ingredients at your disposal and are currently snowed/iced/frozen in, then I highly suggest you make this today! If not, then by the end of the week, stat!

I’ve been trying to figure out what my favorite part of the dish is, and the sad answer is… I don’t know! The spicy meat pairs so well with the smooth sweet potato sauce that neither is overwhelming. Ben isn’t a huge sweet potato guy but this is one dish he really can get into. For the most part, I followed Joanne’s original recipe, but of course I had to add my own little twist, my own little departure from regular ‘ole chili mac… and that is to toss everything in the oven for just a bit, to create some crunchy noodles and a nice layer of melted cheese. By jove, I’ve got it! The crunchy noodles are my favorite part. Crunchy, cheesy, spicy, sweet potato covered noodles, that is! Enjoy! 🙂

Sweet Potato Chorizo Chile Mac

  • Servings: 8

Ingredients:

  • 2 large sweet potatoes [approximately 2 pounds]
  • 1 cup skim milk
  • 1-2 tablespoons chopped chipotle chiles in adobo sauce
  • freshly ground black pepper
  • 4-6 ounces shredded cheese [sharp Cheddar cheese or Monterey Jack], divided
  • 8 ounces small whole wheat pasta [shells or macaroni]
  • 8 ounces chorizo
  • 1/4 cup chopped green onions, divided
  • 1/4 cup chopped cilantro, divided
  • sour cream, for serving

Directions:

Preheat oven to 350 degrees. Grease a 9×13 casserole dish with nonstick spray.

Scrub sweet potatoes and pierce all over with a fork. Place in a microwave safe bowl and microwave for 10-12 minutes, or until cooked through.

While sweet potatoes cook, prepare pasta according to package directions.

When cooked sweet potatoes are cool enough to handle, peel and place in a large bowl. Add milk, chipotle chiles, and a generous amount of pepper. Mash and stir in half of the cheese, then add pasta to sweet potato mixture.

Heat a small skillet over medium heat, then add chorizo and cook 4-5 minutes until brown, stirring to crumble. Add to bowl with sweet potatoes and pasta. Stir together along with half of the green onions and cilantro, then transfer to prepared baking dish. Top with remaining cheese.

Bake for 10-12 minutes or until cheese is golden brown and bubbly. Top with green onions and cilantro and serve with sour cream [if desired].

Notes: preparation time can be reduced for this dish if you bake the sweet potatoes ahead of time.

Creamy Shells and Yogurt

A few years ago, I made Avocado Soup. It was a cold, gazpacho-esque soup made with yogurt, avocados, and seasonings. Hardly any liquid and served cold, it has gone down in history as one of the most disgusting things I’ve ever served for dinner. Nowadays I would have revamped it as a dip or a sauce, but four years ago it just went in the trash. And with it, my desire to use yogurt as anything more than something to eat with granola or occasionally in baking.

With that history of yogurt as a dinner ingredient, it came as a surprise to me when I saw this Creamy Shells and Yogurt recipe online and decided to make it. I know warm yogurt sounds weird, but hear me out. This is totally not what you think. Here, Greek yogurt makes a surprisingly delicious rich pasta sauce when combined with eggs and cheese.

As the sauce comes together, it is almost reminiscent of a rich macaroni and cheese. It is truly one of those dishes that you just have to taste to truly understand.

The eggs, cheese, and yogurt come together to make a tangy sauce that tastes rich while being actually pretty light, but the true star of the sauce are fresh herbs and lots of lemon zest. I used lemon thyme and mint for my herbs, but you could use whatever you have on hand. I think parsley, basil, oregano, or any of the usual suspects would work perfectly–but do try the minty lemon combo if you can. It is divine! For a little extra something-something I added some kale to the mix. You know how I love my kale!

Everything about this dish screams summer, and even though I only made this pasta a couple weeks ago, I’m craving it so badly now and am wondering if I can justify dirtying up the {clean} kitchen at 10:30 pm just for a small bedtime snack. Of yogurt pasta. And this after making Pumpkin Soup for dinner and telling Ben how I just cannot WAIT for apple picking, apple cider, pumpkin chocolate chip mini muffins, and all the joys of fall [which do NOT include football, thankyouverymuch. That’s Ben’s department.]. I am so seasonally confused. I want it all, summer and fall. But most of all, I want a big bowl of Creamy Shells and Yogurt. It is totally a bright and cheery summer comfort food. I am sooo glad to have tried this pasta–hope you will too!

Creamy Shells and Yogurt [adapted from Big Girls Small Kitchen]

Ingredients:

  • 12 ounces shell pasta
  • 8 ounces plain Greek yogurt [whole or 2%]
  • 3 eggs, beaten
  • 1/4 cup mint, chopped + more for garnish
  • 1 teaspoon lemon thyme, chopped
  • 3 green onions
  • zest of 1 small lemon
  • 1 ounce Mozzarella, shredded or cubed + more for serving
  • 1 large handful kale [~1.5 cups]
  • freshly ground black pepper
  • crushed red pepper
  • salt

Directions:

Bring a large pot of water to boil, then add shells and cook to al dente.

Meanwhile, whisk together yogurt, eggs, mint, lemon thyme, green onions, lemon zest, and Mozzarella. Wash kale, remove thick stems, and tear into small pieces.

When pasta is ready, drain and reserve ~ 1/2 cup cooking water. Return pasta to pot and stir in kale. Then add 6 tablespoons water to yogurt sauce and whisk well to temper egg. Pour yogurt sauce over pasta and kale and stir vigorously to coat. Keep stirring until Mozzarella melts, then season to taste with peppers and salt as desired. Serve with additional mint and cheese as desired.

Time: 20 minutes.

Yield: 3-4 servings.
