It’s baked, so it has those crispy edges that we all know and love, but unlike some other baked pasta dishes, the middle has lots of ooey gooey cheesy goodness. There’s really no other way to describe it besides ultimate, divine, incredible, and utterly amazing! You can be somewhat flexible with the cheese that you use–using some cheddar and some parmesan is a must, but other than that, anything goes! American, colby, an Italian blend, gouda… If it’s cheese, it should be good!

As you can tell it was summertime when I took these pictures at my parents’ house, but we enjoy this pasta year round. It would be a great addition to your Christmas table, too. Art Smith's Macaroni and Cheese

  • Servings: 12+

Ingredients:

  • 1 pound pasta – elbow macaroni or penne recommended
  • 4 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 4 cups milk, warmed
  • 4 cups cheese, shredded – definitely use half cheddar + something else of your choice [he suggests American, but just go with what you feel like – Italian blend, colby, gouda, etc.]
  • freshly ground black pepper
  • hot pepper sauce [I use Frank’s]
  • 1/4 cup parmesan cheese, grated

Directions:

Cook pasta to al dente according to package directions, then drain.

Meanwhile, grease a large casserole dish [a 9×13 pan works, as does any 4 quart casserole dish] and preheat oven to 350 degrees.

In a medium saucepan set over medium heat, melt the butter and whisk in the flour. Gradually whisk in the milk. The milk doesn’t have to be hot but it shouldn’t be cold either. Room temperature or gently heated in the microwave is perfect!

Bring sauce to a simmer, stirring constantly, until it begins to thicken. Reduce heat to low and simmer for 5 minutes. Remove pan from heat and stir in half of the cheese. Season to taste with pepper and hot sauce.

Spread a third of the pasta over the bottom of the casserole dish. Top with half of the reserved cheese and a third of the sauce. Repeat: a third of the pasta, remaining cheese, and a third of the sauce. Repeat: remaining pasta, remaining sauce. Top with parmesan cheese and bake for 30 minutes, until bubbly and golden brown.

Notes:

  • Tent pasta with aluminum foil after about 20 minutes if top is browning too much.
  • This recipe can be prepared in advanced, covered, and refrigerated for up to 3 days before baking. Just bring to room temperature for about 30 minutes before baking, or place pan in a cold oven and let oven heat up with the dish. From the refrigerator, you’ll have to bake it at least 40-45 minutes to heat through but use your best judgment.
  • Leftovers freeze well.

If you make ONE new Thanksgiving side dish this year, this totally should be the one! It is absolutely perfect, and a great way to introduce butternut squash to squash skeptics. I mean, isn’t it gorgeous… golden and beautiful?!? One of the fun things about butternut squash is it’s shape. It’s just so BIG for a vegetable! It’s always a shame to take the fun shape and puree it up into soup, mac and cheese, etc. Don’t get me wrong, those are delicious ways to enjoy this sweet ‘n nutty squash. But I always like to do something different! And this au gratin starring butternut squash is definitely different. Ben looked a picture and asked if it was potatoes. No, no, it’s not. But that doesn’t mean it’s not amazing!

It’s the kind of side that’s perfect on its own–hearty, cheesy, and delicious with the perfect balance of flavors. However, I’m sitting here on my couch dreaming of ways to, shall we say, enhance the amazingness for Thanksgiving day. Isn’t Thanksgiving about going all over the top? Adding some chopped bacon to the topping, layering butternut squash with sliced apples, or even drizzling the whole dish with some pesto just sounds wonderful to me! But even without those enhancements, this butternut squash dish is such a winner! Hope it brings joy to your table this year. So sorry, so cheesy. 🙂

Parmesan-Butternut Squash Au Gratin

  • Servings: 6

Ingredients:

  • 1 medium butternut squash [about 2 1/2 pounds]
  • 1/4 cup butter
  • 2 large cloves garlic, minced
  • 1/4 cup panko bread crumbs
  • 1/3 cup grated Parmesan
  • 1/8 teaspoon black pepper
  • 1/4 cup chopped herbs – like oregano or parsley

Directions:

Preheat oven to 375 degrees F. Grease a large baking dish [9×13 inch pan, or a 10 inch round baking dish] with cooking spray.

Poke butternut squash all over with a fork, then microwave for about 2 minutes. Remove and cool for a few minutes before peeling. This makes it much easier to peel and slice the squash. Peel butternut squash, then halve and deseed. Slice squash into 1/2 inch thick slices, then arrange in bottom of baking dish, overlapping as necessary.

In a small saucepan, melt butter over medium heat. Turn to low and add garlic. Stir constantly as butter cooks for 2-3 minutes. Don’t brown the butter, just cook until garlic softens.

In a small bowl, stir together panko, Parmesan, pepper, and 1 tablespoon garlic butter. Brush  remaining garlic butter over squash, then sprinkle with panko mixture.

Bake for 30-40 minutes, until squash is cooked through. Turn oven up to 425 degrees F and cook for another 5 minutes or so, or until topping turns golden brown. Top with herbs before serving.

Ever since we moved to Nashville and got a DVR [yes, I know these have been around forever but we didn’t get one til a year ago. We are way behind technology-wise.] I have been obsessed with recording episodes of cooking and HGTV shows. Because I can, and because they’re good tv shows to watch while blogging or reading magazines or something. I never watch and only watch tv. I need to be doing something else in the process, so I need somewhat mindless shows that aren’t totally trashy. Does that make sense? This one, if you haven’t seen it, requires chefs to dash around a grocery store in search of ingredients for an assigned meal/category of food, and then COOK their meal… but there’s always a twist or challenge. I never in a million years would want to be on Chopped, Cutthroat Kitchen, or any of those other cooking shows… but if I had to choose a cooking competition show to be on, this would be it. It’s relatively tame, Guy seems nice, and hello! Grocery stores are my favorite place to browse. Is that weird? Ha. Anyways, on a recent episode of triple G, one of the judges said that pasta dishes aren’t supposed to be light. She thought they needed to be heavy, or at least, hearty to be a true pasta dish. I have to say I disagree with that. There’s a place for heavy, hearty dishes like baked pasta or lasagna [take a look in my archives, I have tons of recipes like that!] but sometimes lighter pasta dishes totally hit the spot. Maybe they aren’t traditional but I love ’em.

Creamy Tomato and Spinach Pasta | thepajamachef.comThis pasta dish is exactly the kind I love–full of flavor and interesting things, but still relatively light. It uses cream cheese and Parmesan cheese but also a lot of tomatoes, onions, and spinach to balance everything out. You can make this pasta in a pretty short amount of time, using mostly pantry ingredients, so it’s great for weeknights. The sauce can be made while the pasta cooks, so it really doesn’t take more time to make than  a box of mac ‘n cheese. So what if it’s not this big, hearty meal? Isn’t that what sides are for? 🙂 To make this more of a one dish meal, I think some sliced grilled chicken, shrimp, or even some canned white beans would be great additions. I’ll have to try that next time! Enjoy!

Creamy Tomato and Spinach Pasta

Ingredients:

  • 1/2 pound small pasta like penne
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 15 ounces diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • pinch red pepper flakes
  • freshly ground black pepper
  • 2 tablespoons tomato paste
  • 2 ounces cream cheese, cubed
  • 1/4 cup grated Parmesan cheese
  • 4-5 ounces fresh spinach [frozen spinach that has been thawed and drained should also work too]

Directions:

Prepare pasta [al dente] according to package directions.

Meanwhile, in a large skillet, heat oil over medium heat. Add onion and cook until softened about 7 minutes. Then add garlic and cook for 30 seconds or so until fragrant. Add tomatoes [undrained], oregano, basil, red pepper, and black pepper and stir to combine. Add tomato paste and 1/2 cup water to skillet, stirring until tomato paste has dissolved. Reduce heat to low and add cream cheese cubes one by one, stirring until incorporated. Then add the Parmesan cheese gradually, stirring until it is creamy.

When pasta is done, drain and add to the sauce. Top with spinach, cover, and cook over low heat for 2-3 minutes until spinach wilts. Stir in and adjust seasonings to taste. Serve immediately.

Pumpkin Chicken Meatballs with Spaghetti Squash

I don’t know about you, but I’m on a quest to eat as much pumpkin in the next three months as possible. It’s my goal to make/blog about at least one pumpkin dish per week! We’ll see how I do. 🙂 So first…I have a confession to make. I made this dish last year. In fact, it was one of the first new recipes I made in our new Nashville kitchen after we moved here last year. And it just didn’t make it on the blog. Oooops! Moving to a new state and starting a new job kinda takes a lot of time. 🙂 But despite the length of time between eating this dish and sharing it here, I think it’s utterly fabulous! Most people think of pumpkin as a sweet ingredient [helllooo pumpkin pie, cookies, bread, muffins, yada yada yada] but I love it when used at dinnertime. Though pumpkin by itself is actually a little bland, it can add some color, moisture, and substance to sauces, meatballs, or soups when used in a savory sense.  This was my first time using pumpkin in meatballs and I must say I’m super impressed! These meatballs were sooo flavorful and indulgent… if meatballs can be indulgent, haha.

And don’t forget about the spaghetti squash! It’s garlicky and buttery and just plain perfect. It was Ben’s first taste of spaghetti squash and he loved it… especially because of the bacon. Everything’s better with bacon, right? Even pumpkin! With this dish you’ll certainly have one of the more unique ways to enjoy pumpkin. And it’s awesome! Hope you enjoyyy!

Pumpkin Chicken Meatballs with Spaghetti Squash

  • Servings: 6

Ingredients:

  • 1 spaghetti squash
  • 1 pound ground chicken [ground turkey would also work too]
  • 3/4 cup pumpkin puree
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon dried thyme
  • 1 cup panko bread crumbs
  • 1/4 cup parmesan cheese, plus more for serving
  • 1 egg, beaten
  • 2 tablespoons Star Fine Foods Butter Olive Oil – or regular butter or olive oil
  • 3 large cloves garlic, minced
  • 1/2 teaspoon dried sage
  • 4 strips bacon, cooked and crumbled

Directions:

Preheat oven to 375 degrees. Carefully poke holes all over the spaghetti squash with a sharp knife. Place in a baking dish and bake for 80 minutes, rotating halfway through.

While spaghetti squash is cooking, prepare meatballs. In a large bowl, mix together ground chicken, pumpkin, ginger, thyme, panko, parmesan, and egg. Scoop mixture into golfball-sized balls and place in a baking dish that has been greased with cooking spray. Bake for about 25-30 minutes or until cooked through and crisp on the outside. [Hint: put the meatballs in the oven after the squash has cooked for about 65 or 70 minutes–that’ll be good timing so everything is finished about the same time.]

After 80 minutes, remove squash from oven and let cool.

When cool enough to touch, carefully cut in half. Scoop seeds out, then use a fork to remove the “spaghetti” and set aside.

In a large skillet set over medium heat, add olive oil and cook garlic for one minute. Add squash, sage, and crumbled bacon, then cook for about 3 minutes until tender.

Serve meatballs over spaghetti squash with parmesan on top.

Mystery Dish: Minty Turkey Meatballs with Quinoa + Cookbook Giveaway

I had a really tough time with this month’s Mystery Dish. I’m not sure why–pretty much ALL the ingredients on the list are things I love. I was just uninspired I guess. But I don’t think my recipe reflects that… this meal was pretty darn delicious. Andi from Weary Chef was our host and she asked us to use three ingredients from this list: pistachios, wine, mint, gluten-free flour, red pepper flakes, fish, agave nectar, applesauce, blueberries, parmesan cheese, milk, and corn.

A couple weekends ago, we were going to grill turkey burgers [Ben makes a to die for turkey burger with Worcestershire sauce, garlic powder, salt, and pepper] but we were rained out and I had some ground turkey thawed in the fridge. We could have grilled indoors, but instead I decided to make some Mystery Dish magic with these Minty Turkey Meatballs with Quinoa. And you guys… they are so good! I love a good turkey meatball anyway, but add some fresh mint to your typical garlic and onion mixture and they’re definitely amped up a notch. To fulfill the ingredient requirement, I used gluten free flour to help hold the meatballs together and red pepper flakes instead of normal black pepper. In hindsight, I wish I would have used more flour because the meatballs didn’t hold together super well. Though that was three ingredients, I decided to make the flavors even more apparent by making a mint pesto to serve over the meatballs and to toss with the quinoa I decided to serve on the side. If quinoa isn’t your thing, try rice, pasta, or some other grain/starch. Though my pesto wasn’t a true pesto it was still pretty addictive and a great sauce that was nutty, minty, and creamy all at once.

The mint in this dish balances perfectly with the crushed red pepper. I was somewhat generous with the red pepper flakes, but it was definitely an approachable level of spiciness so if you aren’t a spicy person you’ll be okay here. I was supposed to tell you that that description was Ben’s idea, and I was threatened with a lawsuit if I didn’t. 🙂 Ha ha, a lawsuit from my husband. Moving on… I loved how minty this dish is… enough flavor to make things interesting but not so much you think you’re eating toothpaste. I love having a great repertoire of healthy, easy dinners and I know this dish will go into my usual rotation. Hope you give it a try!

Minty Turkey Meatballs with Quinoa

  • Servings: 4
  • Print

Ingredients:

for meatballs

  • 3 cloves garlic, minced
  • 1 green onion, diced
  • 3 sprigs fresh mint, finely chopped
  • 3 tablespoons tapioca flour [or other flour, gluten free or otherwise + more if you need it]
  • 1 egg
  • 1 pound ground turkey
  • crushed red pepper flakes, about 1/2 teaspoon or to taste

for quinoa

  • 1 cup quinoa, rinsed
  • 2 cups water [or stock if preferred]
  • 1 cup prepared pesto [above]

for pesto

  • 1 cup loosely packed fresh mint
  • 1/3-1/2 cup extra virgin olive oil
  • 2-4 tablespoons half and half
  • 1/4 cup almonds
  • 2 tablespoons parmesan
  • crushed red pepper flakes, about 1/4 teaspoon or to taste

Directions:

Preheat oven to 375 degrees. Heat a large skillet with 2 tablespoons olive oil over medium heat.

In a large bowl, combine all ingredients for the meatballs–garlic, green onion, mint, flour, egg, turkey, and crushed red pepper flakes, to taste. Mix well with your hands, then shape into 16 meatballs. Place half the meatballs in the preheated skillet and cook on each side for about 2 minutes per side until browned all over. Remove meatballs from skillet and place in a large oven safe dish, misted with cooking spray if not nonstick. Repeat with remaining meatballs then bake in preheated oven for 20-25 minutes until cooked through.

While meatballs are cooking, prepare quinoa according to package directions. Bring rinsed quinoa and water to a boil in a saucepan, then cover and reduce heat to low. Cook for about 15 minutes until all water is absorbed.

Prepare pesto by combining mint, 1/3 cup olive oil, 2 tablespoons half and half, and almonds in a food processor. Pulse until combined, adding more oil and/or half and half if desired. Stir in parmesan and red pepper flakes to taste. Pesto yields about 1 cup.

When quinoa is ready, pour about 3/4 cup pesto in the quinoa and stir to combine. Serve meatballs with quinoa and reserved mint pesto, along with sides like green beans or crusty bread.
