Chipotle Black Bean Soup with Avocado Cream

I am SO ready for spring. It’s been cold all week, and then last night we got several inches of snow. Not as much as some parts of the country, but still… I am over winter. Entirely. My sister thinks winter is the greatest, and even planned her wedding for December hoping for snow [and there was… see!]. In that case, snow was cute and pretty and fun. In this case, in March, snow is not fun. In my opinion, the only good part about this sort of weather is that it is perfectly aceptable to wear cozy warm sweaters, ridiculously old and soft sweatpants, and boots everyday. Not necessarily altogether now, but you get my drift. And for dinner, it is perfectly acceptable to have soup almost every night. At least, until your husband tires of it. Thankfully, he didn’t tire of soup before we enjoyed this fabulous Chipotle Black Bean Soup with Avocado Cream created by Joanne. I already have one black bean soup recipe that I adore… now I have two! One vegetarian, one meatatarian.

Chipotle Black Bean Soup with Avocado Cream | The Pajama ChefMy go-to black bean soup is thick and chunky with black beans, onion, and spinach, and gets most of its flavors from a variety of spices and chicken broth. This recipe is much simpler, and, as the name implies, heavy on the chipotle flavor. Heavy on the awesomeness, more likely. The actual soup recipe only has six ingredients: chorizo, carrots, onions, chipotle peppers, vegetable broth, and black beans, so the chipotle flavor really does dominate. Chorizo and chipotle peppers are a fabulous combo, but I wasn’t initially sure how the carrots would work in the mix, but it turns out that carrots with a bit of spice are pretty phenomenal.

What really makes this soup pop though is the avocado cream. It’s like a creamy guacamole… but is all in all pretty healthy since the cream comes from avocado and Greek yogurt. It’s jazzed up with lime juice and cilantro, and I added a dash of crushed red pepper. Umm, yum. The whole soup, avocado cream and all, is pretty spicy but nothing I couldn’t handle. I thought it got even better, and almost a little sweeter as it sat in the fridge for a couple days. Like many dishes, the flavors improved over time. I wish I could have had a big bowl for dinner last night in the snow, but alas… I had to settle for Panera instead [tomato soup + fuji apple chicken salad!]. Panera’s good, but homemade’s better. Chipotle Black Bean Soup with Avocado Cream [adapted from Eats Well With Others]

Ingredients:

  • 10 ounces chorizo
  • 4 large carrots, diced
  • 2 large onions, diced [I used 1 red and 1 white]
  • 2 chipotle peppers in adobo, minced
  • 4 cups vegetable broth
  • 3 cups cooked black beans

for the avocado cream

  • 1 small ripe avocado, cut in half and pit removed
  • 1/4 cup Greek yogurt
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon lime juice
  • crushed red pepper

Directions:

Heat a large [4+ quart] saucepan over medium heat, then add chorizo to the pot. Break it up with a wooden spoon, then cook through. If the pan looks really greasy, wipe out some of the grease with a paper towel, then add carrots and onions, and cook until soft. Stir occasionally. Stir in the peppers, then cook for a minute until fragrant.

Add the vegetable broth and black beans to the pot, then cover and bring to a boil. Reduce heat to low, then simmer for 25 minutes.

Meanwhile, prepare avocado cream by combining the avocado, Greek yogurt, cilantro, and lime juice in a food processor or blender. Puree until smooth, scraping the sides as needed. Season with crushed red pepper as desired.

Puree about 1/3 of the soup with an immersion blender if desired [I forgot to do this], then serve soup topped with avocado cream.

Time: 45 minutes.

Yield: 5-6 servings.

Double Blueberry Walnut Muffins

Ben and I are huge yogurt fans. Every week, without fail, our grocery cart contains at least 10 cartons of yogurt [one for each lunch of the work week plus a big tub or two for smoothies or eating at home]… some Greek, some regular, some fruity, some plain or vanilla… whatever I’m in the mood for or whatever is on sale. For awhile I was making my own yogurt in the crockpot, but then grad school began consuming my life too much and making yogurt plummeted on my priority list. There are just too many good storebought brands, right? I look forward to the yogurt in my lunch everyday…it’s my dessert of sorts.

Even though yogurt is something I love a ton, one thing that I don’t do enough of with it is baking! Yogurt is a great ingredient to bake with because it makes muffins and even cakes incredibly pillowy, light, and soft for a fraction of the fat and calories of butter or oil. The inclusion of Liberté Blueberry Greek Yogurt is the secret ingredient in these yummy Double Blueberry Walnut Muffins, and the reason [in my humble opinion] why they are so, so, so good… sweet, hardy, and soft. Perfect trifecta for muffins, I think!

If you’ve never tried Liberté Greek and Méditerranée yogurt before, you should definitely check it out. Ben and I had tried it once or twice before I received a BzzKit from BzzAgent, but after eating this yogurt in place of our normal brands for a week, I think I’m going to become a loyal Liberté fan! The Coconut Méditerranée is amazing! Here’s some info about the yogurt… then I’ll get back to the muffins!

Liberté is new to the US yogurt scene, but has a long history in Canada so I found a recipe for Raspberry Coconut Muffins on their website and modified it based on what I had on hand. I was so pleased with these muffins that they might become my basis for other yogurt muffins in the future! You can definitely modify this recipe based on the fruit, yogurt, and nuts of your choice. I usually don’t add nuts to muffins, but the toasted walnuts in these were excellent. When I baked them last Sunday afternoon, they made my whole kitchen smell absolutely divine, and then they stayed fresh all week long for a lunchbox addition. Yum-o! Can’t wait to make some more. Double Blueberry Walnut Muffins [adapted from Liberté]

Ingredients:

  • 1 cup walnuts
  • 1/4 cup canola oil
  • 2 eggs
  • 1 carton Liberté Blueberry Greek Yogurt [5.3 ounces]
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup blueberries [fresh or frozen]

Directions:

Preheat oven to 350 degrees. Place walnuts on a cookie sheet and toast in preheated oven for 8-10 minutes, stirring halfway through. Watch carefully to make sure they don’t burn! Set aside to cool, then increase oven temperature to 400 degrees. Line muffin tins with paper liners or grease with cooking spray.

In a small bowl, whisk together oil, eggs, yogurt, milk, and vanilla. In a larger bowl, stir together flours, sugar, baking powder, and baking soda. Fold wet ingredients into the dry ingredients, stirring until just moistened.

Chop cooled walnuts, then gently fold walnuts and blueberries into batter. Spoon into muffin cups, filling 2/3 of the way. Bake for 14-16 minutes, or until a toothpick inserted in the center comes out clean.

Time: 40 minutes.

Yield: 16 muffins.

SRC: Baked Jalapeno Popper-Ranch Dip

This month for the Secret Recipe Club I was assigned Wendy’s wonderful blog, The Weekend Gourmet. As I’ve said before, numerous times, I absolutely love being part of the SRC. It’s a fun way to try new blogs and recipes and be part of a fun community. If you’ve missed my past SRC posts, the premise is this: you’re assigned a different member’s blog every month. You visit their blog, choose any recipe you want, then make it and share it on your blog… all while keeping your assignment a secret! Everyone else posts about their secret blog the same day. It’s fabulously fun to try out new blogs. If you have a blog, definitely check it out and consider joining! I highly recommend it.

Anyway, when I first visited Wendy’s blog I was overwhelmed by the number of fabulous recipes there. Wendy is from Texas, and is as warm and welcoming as can be. I mean, how could she not be… she’s from Texas after all. Plus, she has a cat. Nice people always have cats. 🙂  I could hardly decide what to make. Peppermint White Hot Chocolate? Cranberry-Nut Caramel Popcorn? Citrus-Walnut Brown Rice Pilaf? Mmm, I wanted to make them all. In one day. What a delightful day that would have been! But I asked Ben, my chief culinary consultant what sounded good to him, and then we got to talkin’ about appetizers. Our church small group takes turns bringing snacks each week, and if left to my own devices, I would always bake something. But Ben wanted to do something different, so we settled on Jalapeno Popper Dip. But not just any Jalapeno Popper Dip… Baked Jalapeno Popper-Ranch Dip.

This dip is, in a word, awesome. Spicy and creamy and cheesy. Yum. In another word, addicting. It’s great hot right out of the oven [but beware… Wendy calls it hot lava right out of the oven, and I agree]… and it’s equally as good cold out of the refrigerator [ask me how I know… it’s a great 11 pm snack to finish off peppermint tea… ha!]. And in a last word, forgiving. The recipe I’ll give you will be Wendy’s, through and through… even though my version was laden with “mistakes.”

There were so many! I misread the recipe and put all the ranch seasoning in the cheesy mixture, instead of splitting it between the cheese and the topping. I forgot to buy the green onions so those were omitted. I accidentally used up the plain green yogurt in another recipe, so had to substitute some sour cream and mayo instead. I also rubbed jalapeno juice into some tiny cuts on my hand, which was fun. But you know what? Even with all that craziness, this dip was just SO good. It was just demolished by everyone who tried it, even an adventurous two year old. 🙂 You should totally make it for your next appetizer need… I wish I could have posted it before the Super Bowl, but alas… Ben loved it and says you can eat it anytime!

Baked Jalapeno Popper-Ranch Dip [from The Weekend Gourmet]

Ingredients:

  • 8 ounces cream cheese, softened [I used Neufchâtel]
  • 6 ounces plain greek yogurt [I used 4 ounces sour cream + 2 ounces mayo]
  • 1 – 1 ounce package dry ranch dressing mix
  • 1 small can chopped jalapeno peppers, drained [I used 3 fresh jalapenos, about 1 heaping cup, and deseeded 2 of them]
  • 2 sliced green onions
  • 1 cup shredded co-jack cheese
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • olive oil 

Directions:

Preheat oven to 375 degrees. Lightly spray a shallow casserole dish [I used a 10 inch dish].

In the bowl of a stand mixer, combine cream cheese, yogurt, and half of the ranch seasoning. Mix on low until everything is combined. Scrape the sides of the bowl, then add the jalapenos, green onions, and cheese. Mix again, then spoon into prepared dish.

In a second bowl, stir together the breadcrumbs, parmesan, and the rest of the ranch seasoning. Spread on top of the cheese mixture, then spray or drizzle on olive oil.

Bake for 25-30 minutes, or until topping is golden brown and dip is bubbly. Turn dish around halfway for even browning.

Cool for 5 minutes before serving with tortilla chips.

Time: 40 minutes.

Yield: serves 10-12.

Lemon Cranberry Muffins

Man, I am so sad that I didn’t share these Lemon Cranberry Muffins during peak cranberry season!! Boo! It got buried in my post queue and I justtttt found it. What a bummer. Don’t these muffins look divine?

I really have no excuse for not sharing them until now though; I made these muffins in October. But all might not be lost–I just scored three bags of cranberries for 99 cents each at the grocery store, so maybe you can find a crazy clearance sale too, or find some frozen cranberries, or maybe you’re a planner and have already frozen some cranberries for offseason baking needs. In that case: this recipe qualifies. However…. if you’re cranberry-less, do not despair. Read on, be sad for a minute, bookmark this recipe for the fall…and comfort yourself by gazing at my cute kitty hanging out on a pile of blankets.

But back to these muffins… cause they’re pretty too, I think. Pretty and yummy! Did you get a glimpse of these colors? Wow! And the colors aren’t all there is to it. Each bite of these decadent muffins is absolutely incredible. Have you ever had yogurt cake before? I made a lime yogurt cake in the early days of this blog [read: the post is a wee bit embarrassing, but such is life, eh?]. If yogurt cake is new to you, you must try it. It’s a moist, soft, and fluffy with a fabulous crisp top… and it’s made with little [or no] butter. Cray cray! I’ve always loved yogurt, and this is just another reason why.

Now, I’m sure the lemon muffin is absolutely perfect as is. Sweet, with a little tart bite. But really, they are a little incomplete. That’s where the tart cranberries come in. These little berries really liven up a traditional muffin. I love how they pop in your mouth with each bite. 🙂 When I read the recipe called for whole cranberriesI was a bit skeptical, and almost chopped them up, but I’m so glad I didn’t, because the whole berry really makes the muffins special. I love that these muffins are sweet and tart all at once, but if you want more sweetness, check out the original recipe for a glaze that will likely take these over the top!

I’m sure if you’ve read my blog for any length of time you’ve picked up that I love muffins… and everything I post on this blog is something that we have loved. But truthfully, not everything is make again. I’m sure you know those recipes. Things that are too good not to share, but not good enough that you crave it. Well, these muffins do not fall into that latter category. They are definitely make again winter after winter, year after year… in fact, I think I’ll be making them again soon! They are a perfect portable winter treat. Enjoy!

Lemon Cranberry Muffins [from Food Republik]

Ingredients:

  • 1/2 cup vanilla yogurt
  • 2/3 cup sugar
  • 3 large eggs
  • 1 1/2 tablespoons lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canola oil
  • 1 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 cups fresh cranberries

Directions:

Preheat the oven to 350 degrees. Line muffin tin with paper liners or grease with cooking spray.

In a large bowl, beat together yogurt, sugar, and eggs. Then add lemon zest and vanilla extract. Lastly, stir in oil.

In a smaller bowl, stir together flour and baking powder. Gently fold into wet ingredients and stir until just moistened. Add cranberries and stir until combined.

Spoon batter into prepared muffin cups, then bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Cool completely on a wire rack, then store in an airtight container for up to 3 days before freezing the leftovers.

Time: 35 minutes [10 minutes active].

Yield: 14-16 muffins.

Notes: Original recipe called for plain yogurt. Since I used [sweetened] vanilla, I decreased the sugar. If you use plain yogurt, you may want to increase the sugar to 1 cup to match original recipe.

Peaches and Cream Pancakes

There’s nothing I love more than a perfectly cooked pancake. Except maybe a perfectly ripe piece of fruit. And right now, the fruit that is absolutely perfect from my farmer’s market is peaches! Are peaches? I’m sure my grammar expert of a husband will correct me in the comments, and if he doesn’t then I’ll know that he didn’t read this post today. Which might happen since he has training at work this week. Anyways, onto the yummies!

As I said, peaches are perfectly ripe and juicy right now, so what better way to enjoy them for breakfast than in these scrumptious and easy Peaches and Cream Pancakes? The secret to these light and fluffy p’cakes, as they’re sometimes referred to in our house [yes, we’re 4] is room temperature milk and eggs, lots of baking powder, and butter, not oil for the fat. Yes, I said fat. They’re panCAKES so it’s to be expected. 🙂 And it’s only 3 tablespoons, not too bad at all.

Flavoring these lovely pancakes is a generous amount of sweet chopped peaches and tangy, spicy crystallized ginger–not too much, just enough to make an impact. If you love ginger, feel free to increase the amount, but we felt that 1 teaspoon was just right. These pancakes are definitely a welcome alternative to traditional summer blueberry, strawberry, insert any other berry here pancakes.

Don’t forget about the cream! My cream of choice was velvety, luscious vanilla yogurt [Dannon All Natural Vanilla is my favorite]. I eat yogurt as my “syrup” on pancakes pretty regularlly, and love how the creaminess adds some natural sweetness to the pancakes without all the added sugar of syrup [though real maple syrup has it’s place too!].

Ben preferred whipped cream on his pancakes. Though as he pointed out to me, leftovers were consumed with yogurt… and next time, he wants a double [triple?] dose of peaches by trying peach yogurt instead of vanilla. Craaaaazy!

These pancakes are the perfect summertime breakfast. I know I’ve used the word “perfect” about seven times in this post, but I hardly think that’s excessive. Peaches and Cream Pancakes are just so perfect and amazing and I wish I had some right about now! Enjoy!

Peaches and Cream Pancakes [adapted from my Go-To Pancakes]

Ingredients:

  • 1 1/2 cups flour
  • 3 1/2 teaspoons baking powder
  • sprinkle of salt
  • 1 tablespoon sugar
  • 1 1/4 cup skim milk, at room temperature
  • 1 egg, at room temperature
  • 3 tablespoons butter, melted and cooled [can sub oil too]
  • oil for cooking
  • 2 peaches, chopped
  • 1 teaspoon crystallized ginger, chopped
  • vanilla yogurt or whipped cream for serving

Directions:

Preheat skillet over medium heat.

In a medium size bowl, mix together flour, baking powder, salt, and sugar. Make a well in the center. Measure out milk in a measuring cup and then add egg. Beat gently with a fork. Add [cooled] butter and stir again. Pour liquid ingredients into well of dry ingredients, then stir gently to combine. Add half of the chopped peaches and all the ginger, then stir again. Don’t worry if batter is lumpy.

Pour batter onto hot skillet in 1/4 cup increments. Cook for a couple minutes on the first side until bubbles form, then flip and cook on other side until golden brown. Keep warm on a dinner plate covered with an aluminum foil tent until all are prepared, then serve with vanilla yogurt or whipped cream and additional chopped peaches.

Note: It is not 100% necessary to let milk and egg come to room temperature, but it yields better results. Recipe can be easily doubled with good results!

Time: 30 minutes [plus additional time to let milk and egg come to room temperature].

Yield: 12-14 pancakes.
