SRC: Apple Rubies in Coconut Milk

Welcome to another edition of SRC! [Insert shameless plug for my photo canvas giveaway, now through 3/15/14]. Hope you’re all adjusting to that time change. Boo to losing an hour! I grew up without daylight savings time [most of the state of Indiana abstained until I was in college] so this is a semi-new thing for me. Falling back is great…but springing forward? Not so much. But enough about the time… a fun new dessert is calling your name!

My Secret Recipe Club blog this month was Inquiring Chef, written by Jess, an American currently living in Thailand with her husband. She’s pregnant with twin girls! How fun! Jess has a huge repertoire of recipes on her blog–from Thai dishes like Shrimp Bites with Peanut Lime Dipping Sauce, Red Curry Salmon with Coconut Brown Rice, or Pad See Ew, to more traditional dishes like Pimento Cheese, Bagels, and Potato Pancakes. I wanted to make everything!! In the end, I realized I had to go with a Thai dish. How could I not? Instead of a noodle creation, I landed on this unique dessert–Apple Rubies in Coconut Milk. I have seriously never heard of anything like this before…and let me tell you–it is fabulous!

Jess describes this dish so well that I am going to borrow her description: “Each bite is all at once crunchy, creamy, chewy, cold… almost impossible to describe.” Basically, what you have here is are apples soaked in juice, coated with tapioca flour, and then boiled to create a gelatinous coating. These sweet nuggets are served in a bowl with creamy, luscious coconut milk and crushed ice to create a fun taste and texture experience. I wasn’t sure what to expect, but whatever you have in your mind… this is even better! It’s sweet, but not overly so. If apples aren’t your thing, don’t be dismayed: Jess decided to use apples after the traditional “rubies” ingredient [water chestnuts] weren’t to her liking. And it’s genius! Apple Rubies in Coconut Milk  [from Inquiring Chef]

Ingredients:

  • 2 crisp apples, cored, peeled, and cut into small pieces [Fiji, McIntosh, Pink Lady, Gala as well as any other crisp type would work well]
  • 2 cups red juice [I used grape; Jess used pomegranate]
  • 1 cup tapioca flour
  • 1/2 cup granulated sugar
  • 2 cups coconut milk
  • crushed ice, for topping

Directions:

Place apples and juice in a small bowl to soak, making sure apples are completely covered. Soak for 20 minutes.

While apples soak, bring a large pot of water to boil. Set a medium bowl of ice water next to stove to use as an ice bath.

In another bowl, stir together tapioca flour and sugar. After apples are drained, pour apples into tapioca mixture, tossing evenly to coat. Shake off extra tapioca mixture and gently drop coated apples into boiling water. Boil for 5 minutes, until coating is transparent. Remove from water and place in ice bath.

Drain apples and divide between 4 small bowls. Top each bowl with 1/2 cup coconut milk and a serving of crushed ice. Serve immediately.

Time: 40 minutes.

Yield: 4 servings.

Notes: This dish is traditionally made with water chestnuts so those could be used in place of the apples if you wish.

Strawberry Yogurt

Ben and I are yogurt-a-holics. Seriously, at any given time we have about half a shelf of our fridge full of yogurt. Tubs of plain or vanilla. Individual cartons of sundry flavors. It is insane! For awhile, I even made our own yogurt in the crockpot, then strained it out to make homemade Greek yogurt. While that stuff was good, it was time consuming and I fell out of the habit. But our other habit [buying a bazillion flavors at the store] is expensive. What’s a girl to do? Make my own toppings, of course!

Back in the days of homemade yogurt I purchased multiple flavors of jam to stir into homemade yogurt. That was easy, but pricy, and took up tons of valuable fridge space. This time, I had some frozen fruit for smoothies and made up a quick strawberry puree with just a bit of sugar, lemon juice, and cinnamon. Hardly a recipe, yobut this sauce is a perfect addition to those store bought tubs of plain yogurt and I thought some of you may enjoy it too! Lately I’ve been prepping mason jars of strawberry yogurt on the weekend and enjoying them at work all week long. For an extra treat, add some homemade granola or a few mini chocolate chips! Yum!

Strawberry Yogurt

Ingredients:

  • 2 cups frozen strawberries
  • 1 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 32 ounces plain yogurt [regular or greek]

Directions:

In a nonreactive saucepan, combine strawberries, lemon juice, sugar, and cinnamon. Let sit at room temperature for about 30 minutes to let berries defrost, then set over low heat, stirring constantly, until sugar melts and berries begin to break down. Gently break larger berries apart with a wooden spoon. Pour into a small bowl to cool.

Meanwhile, divide yogurt between 6 containers [1 cup/8 ounces each]. When strawberry sauce has cooled, top yogurt with 2-3 tablespoons strawberry sauce. You may have a little sauce leftover. Cover and refrigerate until ready to enjoy.

Time: 60 minutes [10 minutes active].
Yield: 6 servings yogurt, approximately 1 cup strawberry sauce.

Mystery Dish: Spicy Chicken, Spinach, and Corn Enchiladas

This month for Mystery Dish, Christine from I Dig Pinterest and I Did it Too was the head honcho. She gave us the following ingredients to work with: fresh mushrooms, pork, spinach, cream cheese, pineapple, butterscotch chips, macadamia nuts, Sriracha, Ritz crackers, and tortillas. When I first saw the list, I had dreams of a fabulous dessert. But things just didn’t work out due to family and work things… so dinner it was! But shhhh! Don’t tell these enchiladas they were a second choice because they’d be oh so sad. They were SO tasty and SO spicy and SO worth it.

The two ingredients I used from Christine’s list were spinach and tortillas. I thought about also using Sriracha in the spicy enchilada sauce, but after a quick test taste, I realized there was no way I’d be able to handle the heat if I added that. 🙂 So two ingredients it was! Obviously tortillas are an essential part of enchiladas–but spinach? Sounds a little weird. But I’m never one to shy away from adding veggies where they are unexpected. The combination of chicken, spinach, and corn made for a delightful enchilada filling, and when we had a little leftover, I saved it for quesadillas later in the week. Also an excellent choice for this filling! If a super spicy sauce isn’t your thing, feel free to buy some or try my [old old old] recipe for a classic enchilada sauce.

Spicy Chicken, Spinach, and Corn Enchiladas

Ingredients:

  • 4 ounces tomato paste
  • 1 cup tomato juice or water
  • 1/2 cup onion, roughly chopped
  • 1/4 cup green pepper, roughly chopped
  • 1 clove garlic
  • 1-2 chipotle peppers in adobe sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 6 ounces cooked chicken, shredded
  • 2 handful spinach, torn
  • 1 cup corn
  • 1/2 cup salsa
  • 8 flour tortillas
  • 1 cup white cheddar cheese [pepperjack or a Mexican blend would also be good]

Directions:

Preheat oven to 350 degrees.

In a food processor, combine tomato paste, tomato juice, onion, green pepper, garlic, chipotle peppers, chili powder, cumin, and oregano. Process until smooth. Spread 1/3 of the enchilada sauce in the bottom of a 9×13 baking dish.

In a bowl, stir together chicken, spinach, corn, and salsa. Divide mixture between the tortillas, then place seam side down in the baking dish. Top with remaining enchilada sauce and the cheese.

Bake for 25-30 minutes or until cheese is melted and bubbly.

Time: 45 minutes [15 minutes active].

Yield: 4 servings.

Strawberry Chocolate Chip Cookie Bars

My sister made these AWESOME cookie bars for our family this Valentine’s Day, along with some red velvet brownies and chocolate chip cookies. Aren’t they cute? They taste just as good as they look, so after my first bite I asked Kathleen for the recipe and made them on Friday. I think it just might become a new Friday tradition.

Strawberries and chocolate are a classic combo–one of my faves [the Chocolate Covered Strawberry Blizzard is my go-to at DQ], so it was no surprise that I loved these cookie bars. I’m usually a homemade-only kinda baker/chef, as you know, but the use of strawberry cake mix is absolutely essential in these cookie bars. I’m sure you can make a good strawberry cake somehow, but all my tries at the homemade variety have been flops. And let’s face it–the store bought box is so easy and so delicious. I served these uber pink bars for a church small group game night, and everyone loved them. Fortunately there were a few leftover so I could snap a quick photo for you! 🙂

I know that I’ll definitely be looking for any excuse to make these pretty pink cookie bars in the future. A little girl’s birthday party [or a big girl’s…:)], Valentine’s Day, or just an average Friday are just three of the instances that come to mind. I hope you enjoy them as much as I did! Strawberry Chocolate Chip Cookie Bars [adapted from Sally’s Baking Addiction and my Funfetti Cookies]

Ingredients:

  • 1 box strawberry cake mix [Pillsbury 15.25 ounces OR Duncan Hines 18.25 ounces]
  • 1 teaspoon baking powder
  • 1/4 cup canola oil [for Pillsbury] or 1/3 cup canola oil [for Duncan Hines]
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup chocolate chips

Directions:

Preheat oven to 350 degrees. Grease an 8×8 inch or 9×9 inch pan with cooking spray.

In a large bowl, whisk together cake mix and baking powder. In a measuring cup, whisk together oil, eggs, and vanilla. Pour wet ingredients into the dry ingredients, then fold in chocolate chips. Dough will be oily and very thick.

Press dough into prepared pan, then bake in preheated oven for 18-20 minutes, or until edges are golden brown and a toothpick inserted in the center comes out clean.

Cool before cutting into bars.

Time: 30 minutes.
Yield: 16 servings.

Fresh Cranberry Coffee Cake

Happy Valentine’s Day! I’m afraid I don’t have any lovey-dovey dessert to offer you today. For your chocolate overload or cutesy heart shape dessert, you’ll have to look elsewhere. If you need an easy red velvet dessert, check out these Red Velvet Marshmallow Bites I made last year. Yum!

Today all I have to offer you is breakfast. A treat for tomorrow, perhaps? I hope cranberries aren’t too hard to come by in your part of the world on this fine February morning. They certainly make this cinnamon sugar-laced coffee cake something extra special.

This cake is so easy to make, and is a perfect buttery base for those tart berries. I added a bit of cinnamon and cloves to the original recipe, thinking those warm spices would be delicious alongside the orange zest, and you know what? I was RIGHT!

To top everything off, add a light powdered sugar icing. It makes all the difference! I heated up the icing just before drizzling on the cake–a very good move, as it crisped up after meeting the cake. I just love crisp glaze-y icing. Delish!

Fresh Cranberry Coffee Cake [slightly adapted from Sweet Anna’s]

Ingredients:

for cake

  • 1 tablespoon sugar
  • 1/2 teaspoon cinnamon
  • 3 eggs
  • 2 cups sugar
  • 3/4 cup butter, softened
  • 1 teaspoon vanilla
  • 2 cups flour [I used white whole wheat]
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • zest of one orange
  • 12 ounces fresh or frozen cranberries

for icing

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Directions:

Preheat oven to 350 degrees. Grease and flour a 10 inch tube pan with a removable bottom. Set aside.

In a small bowl, mix together sugar and cinnamon. Set aside.

In the bowl of a stand mixer [or with a hand mixer], beat eggs and sugar together until light and fluffy, nearly doubled in size. This will take about 8 minutes.

Add in butter and vanilla, and beat for an additional 2 minutes.

Stir in flour, nutmeg, cloves, and orange zest with a wooden spoon until just combined. It will be very thick.

Spoon half of the batter into the bundt pan, then evenly top with the cranberries and reserved cinnamon sugar mixture. Spoon the rest of the batter over the cranberries [some cranberries may still be visible].

Bake for 45-50 minutes, until a toothpick inserted in the cake comes out clean. Check after about 30 minutes, and cover with foil if cake is browning too much.

Remove to a wire rack to cool, gently using a knife to loosen cake from the bottom and sides of the pan. After cake cools completely, whisk together the powdered sugar and milk, microwave for about 30 seconds, then drizzle over the cake before serving.

Time: 60 minutes [15 minutes active].

Yield: 12 servings.
