I’m not sure when I switched from being a three bean salad hater to a three bean salad lover, but I’m glad I gave this classic cookout dish another try! My mom always makes her three bean salad with green beans, wax beans, and kidney beans, so naturally, that’s what I do too. What I love the most about this simple side dish is that you can make it ahead. In fact, I highly recommend doing so, as the flavor gets better over time.

This recipe is one of the few things I ever make with canned vegetables. There’s something about the texture of canned veggies that just isn’t my favorite. But I think the softness of the canned green beans and wax beans really make this dish. If canned veggies aren’t your thing, try frozen… or even cook your own green and wax beans and use them here. I use frozen veggies in this dish frequently. Just make sure to thaw them first!

As I’ve made this three bean salad more often over the years, I’ve slowly adapted it *just a bit* from my mom’s recipe. I go heavier on the pepper than she does (but that’s true with about anything I make… I heart black pepper!), usually make a little less dressing and reduce the sugar, AND (game changer) add fresh herbs when I have them on hand! Fresh dill is my FAVE in this dish, but parsley and chives are also excellent. A little bit of chopped fresh herbs adds a little extra pop that we love. Totally optional, but highly recommended.

Mom's Three Bean Salad

  • Servings: makes about 6 cups

Ingredients:

  • 1/2 cup apple cider vinegar
  • 1/2 cup oil (a light olive, canola, grapeseed, etc.)
  • 3/4 cup sugar (can also be cut down to 1/2 cup if desired)
  • 1 teaspoon freshly ground black pepper
  • 1 – 15 ounce can green beans, drained and rinsed (no salt added if possible) – frozen, thawed green beans are also great here too
  • 1 – 15 ounce can wax beans, drained and rinsed (no salt added if possible) – frozen, thawed wax beans also work well too
  • 1 – 15 ounce can kidney beans, drained and rinsed (no salt added if possible)
  • 1 small onion, minced (about 1 cup)
  • 1/2-1 cup green pepper, minced
  • 1/4-1/2 cup chopped fresh herbs, optional – try dill, parsley, or chives

Directions:

Whisk together vinegar, oil, sugar, and pepper in a medium bowl. Fold in green beans, wax beans, kidney beans, onion, and green pepper. Stir in chopped fresh herbs, if desired.

Cover and chill in the refrigerator for at least 30 minutes before serving to allow the flavors to marry.

In my opinion, this salad tastes best the next day. There will be extra liquid so you could reduce the vinegar and oil down to 1/3 cup if desired, or add an extra can of beans. Or just leave as-is… that’s what I always do! Enjoy!

This is a fantastic, flavorful weeknight stir fry! I’ve been making it for years and it’s a family favorite that I know you’ll enjoy.

So, I’ve been holding out on you. I’ve been making this recipe for over five years now. I had to check my source to verify this, but it’s true. I’ve been making Szechuan Green Beans for dinner since my grad school days, crazy. I can’t tell you the number of times this has been on the menu plan for dinner at our house. I am not a recipe repeater–you know this by now!–unless said recipe is goooood. So you know this one has to be! It is a fabulous weeknight dinner… even though the list of ingredients is long, it comes together in 30 minutes or less. Score!

For this recipe, unlike some stir fries that are really complicated, what you see is what you get. Green beans–check. Ground meat–check. Green onions–check. And some sauce for flavor–check. I typically make this stir fry with ground turkey, but you can also use pork and frankly, chick or beef would be fine too. But I like a lighter, leaner ground meat with this recipe because, to me, stir fries are supposed to be light. But who knows how real that is and how much that’s just me. Haha. A lighter meat goes well with the slightly spicy, slightly sweet sauce. When I say slightly spicy, I really mean just enough spice that there’s some flavor, but this is definitely a kid friendly dish so no worries there. Ben and I have found that the recipe, as written below, serves two of us for dinner well. Sometimes there’s an extra serving left for lunch the next day, but more often then not, there isn’t. Also, this stir fry is light on the meat so feel free to increase that as needed for your family. Enjoy!

Szechuan Green Beans

  • Servings: 2-3 but can easily be doubled, tripled, etc.

Ingredients:

for the sauce

  • 2 tablespoons water
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoing wine, dry sherry, or mirin
  • 1 teaspoon sugar [omit if using mirin since that’s already sweet]
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon dry mustard

for the stir fry

  • 2 -3 tablespoons canola oil
  • 1 pound green beans, trimmed and cut into 2 inch pieces
  • 1/3 pound ground turkey or pork
  • 4 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 3 green onions, sliced
  • 1 teaspoon sesame oil
  • hot cooked rice, for serving

Directions:

In a medium bowl, whisk together all the sauce ingredients and set aside.

Then, heat 2 tablespoons of oil in a large skillet or wok over medium-high heat. Add the green beans, tossing to coat in the oil. Cook them for 7-9 minutes, stirring often, until they are dark and shriveled in places. Remove from pan and place in a large bowl, covering to keep warm.

If using lean turkey, add the last tablespoon of oil to the skillet. If using pork or a fattier cut of turkey, add directly to hot skillet. Break apart the meat, stirring continually for 2-3 minutes until cooked completely. Add in garlic and ginger and cook for 30 seconds, or until fragrant. Re-whisk the sauce for a minute, then pour over the meat. Stir together and cook for another minute or so to thicken sauce. Remove pan from heat and add in green onions, sesame oil, and green beans. Toss together, then serve over hot cooked rice. Enjoy!

Note:

You can increase the amount of meat if desired, but for more meat, you will need more sauce. When I make this with 1/2 pound meat I double the sauce, but play around with the amounts to suit your preferences.

Green beans are one vegetable that Ben and I both LOVE so we have them as a dinner side pretty often. Usually I just steam them on the stove. Occasionally I toss them in the oven to roast with some sweet potatoes, but that’s usually the extent of my green bean repertoire. Not anymore! Now, I’m gonna be grilling them up every chance I get! Grilled Green Beans, Mushrooms, and Duck Bacon

  • Servings: 4

Ingredients:

  • 1 pound green beans, washed, dried, & trimmed
  • 4 ounces Baby Bella Mushrooms, cleaned & sliced into large pieces
  • 4 slices duck bacon [from Maple Leaf Farms], sliced into eighths
  • freshly ground black pepper
  • salt

Directions: Add green beans, mushrooms, and bacon to a mesh grilling basket. Season as desired–I always use a lot of pepper and very little salt. Grill over indirect heat for 20 minutes, shaking every 5 minutes or so, or until bacon is fully cooked. If you don’t have a grilling basket, you can wrap ingredients in foil and grill in a foil packet. It won’t be exactly the same but the smoky flavors will still shine through.

Quick & Healthy Pineapple Fried Rice

Lately I’ve been really into quick but still healthy meals. Working full time is great… but when I get home from a long day and an even longer commute, half the time I want to just curl up on the couch with my soft blanket and my Kindle, and the other half of the time I want to bake doughnuts, cookies, and muffins and skip dinner entirely. No idea why this disparity, but dinner is usually not my highest priority. But ya gotta eat, right? So I’ve been turning to quick meals that are still healthy and that make loads of leftovers to eat all week long, like this fabulous Pineapple Fried Rice. This crave-worthy dinner can be made in about 20 minutes so it’s awesome for busy or lazy nights when you just want something yummy but not heavy.

I started off this dish with the Asian Cuisine Cooking Oil from STAR Fine Foods which they graciously sent me to try out. If you can’t find this at your local grocery store, just add a little ginger [fresh or ground] and some extra soy sauce as the veggies are sauteing. Normally I wouldn’t think of using special infused oils on an ordinary weeknight, but I’m beginning to change my mind. They really make an ordinary dish shine–and cut down on my prep time so I can get back to my book sooner. 🙂 #librarianalert

For this batch of fried rice, I used garlic, carrots, edamame, peas, and green beans, but feel free to use whatever veggies you want. I’m thinking some sugar snap peas and broccoli would be good to try next time. What we especially loved about this vegetarian fried rice was the subtle sweetness of the pineapple with the salty soy sauce and sesame oil. Oh man, what a combo! This dish was hearty enough without meat [I totally think fried rice is one of those dishes where meat isn’t missed] but if you gotta have some, pork or shrimp would be good. Chicken is too predictable, methinks. Oh, and don’t forget the chopped honey roasted peanuts on top. Crunch crunch! 🙂 Cilantro would be a good addition too! TTYL 🙂 [I can’t believe I just wrote that. LOL! Hahaha.] Enjoy!

Quick & Healthy Pineapple Fried Rice

Ingredients:

  • 2 tablespoons STAR Asian Cuisine Cooking Oil [extra virgin olive oil infused with soy and ginger]
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2/3 cup frozen edamame
  • 2/3 cup frozen peas
  • 2/3 cup frozen cut green beans
  • 20 ounce can pineapple tidbits in pineapple juice, drained [reserve 1/4 cup pineapple juice and save the rest to drink or for something else]
  • 4 1/2 cups cooked, cold rice [day old if possible]
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • 1 teaspoon toasted sesame oil
  • sesame seeds, for serving
  • chopped honey roasted peanuts, for serving

Directions:

Add cooking oil to a large skillet or wok set over medium-high heat. When hot, add carrots and saute for 5 minutes or until crisp-tender. Add garlic and saute for about 30 seconds, until fragrant. Stir in edamame, peas, green beans, and pineapple. Cook for a minute or so until they just begin to soften.

Add rice and soy sauce to vegetables, then stir continuously for about 4 minutes, until rice is hot and begins to crisp up.

Push all the rice mixture to one side of the pan and pour the eggs in the empty spot. Quickly stir the eggs on the hot surface until they just begin to cook, then whisk them into the rice mixture. Pour in toasted sesame oil, then stir to combine.

Remove from heat, and serve fried rice with sesame seeds and chopped honey roasted peanuts.

Time: 20 minutes.

Yield: 5-6 servings.
