Another day, another #Choctoberfest recipe! This one slightly healthier than the delectable cake from Monday. 🙂 Energy bites, granola bites, energy balls… whatever you call them… are SO tasty and SO fun to make. Just mix, roll, and chill, pretty much. They’re great to have on hand for a healthy yet filling snack option or even a quick breakfast on the go for busy mornings. Most recipes use nut butter as the base, so I was excited to find a version that used PUMPKIN as the binder. I always gotta do something different, haha.

Since we’re smack-dab in the midst of #Choctoberfest, I decided to try to make an uber chocolately energy bite recipe. Thanks to a healthy dose of dark chocolate cocoa powder AND dark chocolate chips, these Double Chocolate Pumpkin Energy Bites pretty much taste like a brownie. I’ve been keeping some in the fridge at work, and they are perfect for a mid-afternoon snack. Healthy, yet satisfying.

Double Chocolate Pumpkin Energy Bites

  • Servings: 32 bites

slightly adapted from A Kitchen Addiction

Ingredients:

Directions:

In a large bowl, stir together oats, flaxseed, cocoa, and pumpkin pie spice. In a small saucepan set over medium heat, whisk together honey, maple syrup, pumpkin puree, and coconut oil. Bring to a boil, and allow to boil for 4 minutes. Stir constantly so it doesn’t burn! Remove from heat.

Pour honey mixture over oats and stir until combined. At this point, you can stir in the pepitas and chocolate chips so the chocolate melts and gets all gooey OR you can wait for 5 minutes before stirring in the mixins. I stirred everything together right away.

Cover and refrigerate for at least 30 minutes for mixture to cool and chocolate to harden, then remove and roll into 1 1/2 inch balls. Place on a baking sheet and refrigerate for at least an hour before transferring to an air-tight container. Store in the refrigerator or freezer. Enjoy!

This cake is a riff on one of my favorite fall treats (and one of the most popular recipes on my blog!): Cinnamon Sugar Apple Cake. The original cake is a delight… I never can decide what part is best: the cake full of sweet bites of apples or the crunchy cinnamon sugar topping. But guess what guys?? This chocolate-y version might be even better! I made a few changes to the original recipe in order to add cocoa powder to make this incredible cake (using water instead of buttermilk and then adjusting the amount of baking soda and flour) but otherwise this is just a fun twist on the original.

I know it might sound a bit cheesy, I was thinking about family as I made this cake. I actually made it over the course of a few hours on Saturday morning. Early that morning, I went running with a friend. My toddler stayed home with my husband, and after I got home, Ben went out for a run. He’s training for a half marathon so I knew he’d be gone for awhile. My son played and ate second breakfast while I ate my breakfast and enjoyed some coffee. We read books for a bit and then I thought it was safe to head to the kitchen to bake. I got about halfway through mixing together this cake when my son’s head collided with a kitchen drawer. Baby tears, commence! He just couldn’t be calmed down with any of the normal methods… so we curled up in an armchair and cuddled. Soon he was out like a light. It’s been awhile since he’s napped in my arms (or taken a morning nap!) so this was a treat. Even though my half finished cake batter was hanging out on the kitchen counter and my plan for the day was thrown off. After he woke up, I was able to return to the kitchen and finish mixing up my cake. When it came out of the oven and I took that first bite, I knew I had a winner. And I’ll always remember the first time I made the chocolate version of cinnamon sugar apple cake with my son playing at my feet. ❤ He won’t remember it, but he loved every bite I shared with him. Chocolate Cinnamon Sugar Apple Cake

  • Servings: 20

adapted from my Cinnamon Sugar Apple Cake

Ingredients:

  • 1 1/2 cups light brown sugar, packed (I used Imperial Sugar)
  • 1 cup water
  • 1/3 cup canola oil
  • 1 egg
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder (not dutch-process)
  • 2 cups chopped apples, unpeeled – I like Gala, Fuji, Granny Smith, Crispin, Jonagold, Winesap, etc.
  • 1/2 cup white sugar (I used Imperial Sugar)
  • 2 teaspoons cinnamon
  • 1 tablespoon melted butter

Directions:

Preheat oven to 325 degrees F. Grease a 9×13 inch baking dish with cooking spray.

In a large bowl, whisk together brown sugar, water, oil, and egg. Stir in baking soda and vanilla. Mix in flour and cocoa powder. Beat until smooth, then fold in apples.

Pour batter into prepared baking dish.

In a small bowl, stir together sugar and cinnamon, then drizzle melted butter over top. Mix gently with a fork to combine, then sprinkle over batter. It will not fully cover the batter, but it will bake up fine.

Bake for 40-45 minutes, or until cake begins pulling away from the edge of the pan and a tester inserted in the center comes out clean. Serve warm or at room temperature. Pairs well with ice cream!

Fudgy Fresh Mint Brownies

Every summer, I grow lots of herbs on my balcony. I can’t wait for the day I have a yard so I can have a garden! But until then, I’m content with my low-maintenance substitute. My choice of herbs varies from year to year, but this year I have Thai basil, Greek oregano, catnip, and peppermint growing happily on my balcony. I always grow mint but never really do much with it aside from making copious batches of mint water, mint iced tea, etc. Sometimes I make fruit salad with mint dressing or a vinaigrette with mint, but more often than not, my mint kind of goes to waste. Except for the smell. I just LOVE the smell of fresh mint. Don’t you?

One thing I’ve always wanted to do is make a chocolate dessert with fresh mint, and last weekend, I finally got around to it! These brownies are not overwhelmingly minty–nothing like those over the top, ooey gooey Andes Mint Brownies that are super popular. I’m sure you know the ones I’m talking about! Those are good, but these are something extra special. There’s nothing artificial tasting here! Just fudgy, frosted cocoa brownies with a hint of mint. They’re refreshing and super tasty!

But enough about the mint… the brownies deserve some love too, right? I’ve tried quite a few homemade brownie recipes. They’ve either been too cakey, too dry, too complicated, too expensive [as in: half a pound of butter, half a pound of chocolate, etc. etc. etc.]. I don’t mind spending money on a recipe if it’s going to be good, but if it’s gonna flop…? Ugh, I might as well buy a box! But these… these brownies are perfect every time! I’ve made these fudgy cocoa brownies with frosting several times and always have been impressed with their chewy texture and consistency. Most people are shocked to hear that they’re just made with cocoa and not chocolate chips or bars… or a box! For the brownie AND the frosting. They’re just the best–and I know I’m not eating a bunch of chemicals! Win win! No one will be able to resist them!

For this batch of Fudgy Fresh Mint Brownies, I changed Jen’s base recipe just a tad to use coffee instead of milk in the frosting. I also added some coffee to the brownie batter to add some extra moisture since I threw in a bunch of fresh mint leaves. Speaking of the mint leaves… I chopped them up veryyy finely and baked ’em right in. You can hardly tell, unless you cut into one on the edges. If the thought of that bothers you, you could a) blend the batter with a blender or b) let the mint steep in the melted butter for awhile to infuse it, then drain it out through a fine sieve. I actually tried to do that second option, but made the mistake of also adding the sugar and found it was too thick to efficiently strain out. No matter your method, the end result is fabulous. I think these would make some pretty terrific brownie sundaes! Oh, and btw… these brownies are so fudgy and moist that they aren’t dried out, even a week later, if they’re kept tightly covered. I mean, they probably won’t last that long, but for the record it’s good to know! Enjoy! 🙂

Fudgy Fresh Mint Brownies

Ingredients:

for the brownies

  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup fresh mint, finely minced
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon strongly brewed coffee, optional
  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon baking powder

for the frosting

  • 3 tablespoons butter, softened
  • 1 tablespoon honey
  • 1 tablespoon strongly brewed coffee [or milk]
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 3 tablespoons cocoa powder

Directions:

Preheat oven to 350 degrees. Grease an 8×8 pan with cooking spray.

Melt butter in a saucepan set over low heat. Add sugar and mint and stir to combine. Remove from heat and let rest for 10 minutes. Mix in eggs, vanilla, and coffee, then add in cocoa powder, flour, and baking powder. Spoon into prepared pan.

Bake for about 25 minutes, then remove to cooling rack to cool. Do not overbake!

Make frosting by stirring together butter, honey, coffee, and vanilla. Slowly whisk in cocoa powder and powdered sugar. Spread on brownies while they are still warm–I like to wait about 10 minutes so they aren’t super hot. Cool completely to set frosting, then cut into bars to serve.

{Healthy} Mexican Hot Chocolate Breakfast Bars

Would you like a rich, chocolately, fudgy bar for breakfast? They have a hint of cinnamon and cayenne reminiscent of the fancily flavorful Mexican Hot Chocolate that is so addicting once you get past the fact that you’re drinking something with a little heat. I bet you’ll love them.

{Healthy} Mexican Hot Chocolate Breakfast Bars | The Pajama ChefBut…… I know, I know. Chocolate for breakfast is everyone’s dream. Emphasis on dream, not reality. Especially in near brownie form, complete with chocolate chunks and coconut flakes. Perfecto! Nah, you say. No can do. Welllll, what if I told you they were healthy. What if I told you they were healthy without seeming healthy. What would you say then? I hope you’re in. I hope you’re game. Because these Mexican Hot Chocolate Breakfast Bars are secretly healthy. Made with a base of [gasp] sweet potatoes and black beans, this is one breakfast treat that anyone can get into eating.

I don’t usually calculate nutrition stats for my recipes, but I did for this one and discovered that each bar is 247 calories each, with 6 grams of fat. Thanks to the sweet potato and black beans, each serving has as much protein as an egg [6 grams] and as much potassium as a small banana [300 milligrams]. Add in the 6 grams of fiber and high amounts of vitamin A, this is a breakfast to be proud of. Unfortunately, the sugar content [29 grams] is higher than many breakfasts, but there are a couple ways this could be lowered–by using less honey or unsweetened versus sweetened coconut [or even subbing nuts for coconut altogether]. But that stat aside, I [the non-nutritionist, dietitian, and professional that I am] feel pretty good about eating this for breakfast. A bit indulgent, yes, but homemade, nutrient rich, tasty, and satisfying. Paired with a piece of fruit or some skim milk to round out the meal, these bars are really filling. Seriously… for the girl who usually eats a midmorning snack, a couple days when I ate one of these for breakfast at 8 am after a workout with a piece of fruit I wasn’t hungry until 1 pm. CRAY cray!

But don’t just take my word for it. Nutrition and all that boring info aside, I’m guessing you might be a bit hung up on the sweet potato/black bean base. I have two words: don’t. worry. I promise. Pinky swear, in fact. No one will be able to tell.

Case in point: the whole time I made these, Ben was playing video games in another room. True to routine, after they were baking, I visited him with the batter spoon for a test taste. Mum was the word, and he licked the bowl with a vengeance. They were pulled out of the oven and set on a cooling rack next to an assortment of clean dinner and baking dishes air-drying on a towel. Ben said they looked like brownies, and that he was looking forward to a breakfast treat. He even tried a piece that had cracked off the top and said it was delicious. Still, I said nothing. It was only when we had gotten into bed that I fessed up. What can I say… I can’t go to bed in deceit. Without batting an eye [at least, I think so… it was dark], Ben just laughed. He’s used to my kitchen games by now. And then, the next morning he took one to work for breakfast, along with a few others for his co-workers to try. That night, he came home with rave reviews. If that’s not an awesome testimony, then I don’t know what is.

I mean, I FINALLY tricked my husband into eating [and loving] something secretly healthy. I mean, I did here, so it’s been done before. But I failed here, and also have failed with a  smattering of other dishes over the years. Believe me, Ben eats plenty of healthy foods, but when it comes down to it, he would choose a rich, chocolately brownie over a bowl of sweet potatoes. Who wouldn’t? But why should you have to choose? If no one can tell, then I say game on and serve a secretly healthy Mexican Hot Chocolate Breakfast Bar in the morning. You won’t regret it…. especially if you heat ’em up for about 20 seconds before enjoying. Melty chocolate in the morning is the bestttt!

Mexican Hot Chocolate Breakfast Bars

  • Servings: 12

heavily adapted from Eliza’s Edibles

Ingredients:

  • 1 1/2 cups no salt added black beans, drained and rinsed [a 15 ounce can or cooked my way]
  • 1 cup honey
  • 1 large sweet potato, scrubbed, peeled, and cooked [about 1 1/4- 1 1/2 cups]
  • 1/4 cup buttermilk
  • 1 egg
  • 3 tablespoons natural peanut butter
  • 1 tablespoon vanilla extract
  • 1/2 cup + 2 tablespoons cocoa powder
  • 3 tablespoons whole wheat flour
  • 3 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • dash of cayenne pepper [optional]
  • 1/4 cup chocolate chunks + more for sprinkling on top
  • 1/4 cup sweetened coconut flakes + more for sprinkling on top

Directions:

Preheat oven to 350 degrees. Thoroughly grease and “flour” [using cooca powder] a 9×9 pan.

Add black beans and honey to a food processor and process until smooth, taking care to scrape the sides periodically to eliminate unsightly black bean chunks. Then chop sweet potato into small chunks and add to food processor along with the buttermilk, egg, peanut butter, and vanilla. Process again until everything is fully combined and very smooth. Mixture will be thick but not heavy.

In a small bowl, stir together cocoa powder, flours, baking powder, cinnamon, and cayenne pepper.

Transfer black bean mixture from food processor into a large bowl, then fold dry ingredients in. Stir until well combined, then add chocolate chunks and coconut flakes.

Spoon batter into prepared pan, then top with extra chocolate chunks and coconut flakes. Bake for 40-45 minutes, covering with foil for the last 10 minutes or so to ensure coconut on top toasts, not burns. Test with a toothpick to ensure bars are done, then cool completely before cutting. Keep refrigerated.
