Greek salad has been my LIFE recently. I’ve eaten a huge bowl for lunch everyday the past couple weeks, and think that’s going to happen again soon. [But I need more tomatoes!] My philosophy is… a big salad for lunch means dinner can be whatever I want. Even mac & cheese from Panera. That stuff is so good and I’d never ordered it myself until last Wednesday, much to Ben’s relief [on Panera dates before I’d always steal like half his bowl]. Because salad for lunch = indulgence for dinner. Or something like that. Right?!?

Anyways, salad. And this dressing. I just can’t get enough! It’s creamy and tangy and so so fresh. I know my Greek salad isn’t exactly authentic and this dressing isn’t either, but it’s close enough. It’s full of flavor–all garlicky and lemony and herby! Just perfect. Some salad dressings are a little too oily without enough vinegar and acid to balance things out, but this half and half combo is just how I like it. I adapted a grandma recipe [not my grandma, but Laurie’s] so that’s why it must be so good! 🙂

I use this dressing to top off a simple Greek salad of romaine, tomatoes, cucumber, chickpeas, red onion, and feta. Heavy on the chickpeas and feta for me, please! If you like, you can add olives or chicken or whatever else sounds good. Apparantly the dressing is also a killer chicken marinade. Filing that bit ‘o info away for next time! BTW this dressing keeps for about a week in the fridge, so feel free to make a double batch. You’ll need it!

Greek Dressing

  • Servings: 8 ounces
  • Print

adapted from Simply Scratch
Ingredients:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup lemon juice
  • 1/4 cup oregano, loosely packed [or 1 teaspoon dried oregano]
  • 1 large clove garlic
  • 1/2 teaspoon kosher salt
  • generous amount of freshly ground black pepper
  • to serve with a simple salad: torn romaine, tomatoes, cucumber, chickpeas, red onion, feta

Directions:

Place all ingredients in a food processor or blender and pulse until smooth. I love my immersion blender for this! Taste and season with additional salt or pepper if necessary.

You can also finely chop the oregano and mince the garlic and shake all ingredients together.

Store in a jar, refrigerated, for up to a week.

Today I have the BEST SALAD EVER to share with you!! I am so psyched, I can hardly wait to tell you about it [even though it is not original at all. But that’s okay.] But first, this recipe qualifies for not just one, but two challenges. Woohoo! First of all, I created this recipe for Mystery Dish. But since it includes a fantastic homemade ranch dressing, it also helps fulfill one of my 30 before 30 goals. Score!

This month for Mystery Dish, Chez Catey Lou is our host. Cate is so sweet and gave us such a creative list to work with! We had to use at least two ingredients from this list: raspberries, peanut butter chips, edamame, lemon, yeast, whole wheat pastry flour, bacon, buttermilk, basil, and zucchini. There were a thousand ways I thought about going [I probably say that every month…sorry] but my craving for a salad won out in the end. I used a few of Cate’s ingredients [lemon, buttermilk, and basil] to make an awesome Jalapeno Ranch Dressing to dress up a BBQ Chicken Salad.

I have long searched for a good homemade ranch dressing. I’ve made this recipe once before and let me tell you..it’s a keeper! It’s creamy, spicy, and best of all… clean! No weird mystery ingredients in the powder, thankyouverymuch. The key to this recipe is the jalapeno. It just elevates this creamy, herby dressing with a bit of spice. Oh so good!

You know what else is good? This salad! I know a zillion restaurants have variations of BBQ Chicken Salad and this was mine. I just used seven ingredients so it’s pretty basic: lettuce, chicken, BBQ sauce, corn, tomatoes, black beans, and ranch dressing. You could also add avocados, onions, bacon, or anything else that strikes your fancy.

I kept it simple though so the flavors could really shine. You will really want to make it again and again. One bite of this and Ben was swooning. Seriously! This is a man’s salad, and definitely fancy enough for a restaurant. Hope you enjoy it as much we do!

BBQ Chicken Salad with Jalapeno Ranch Dressing

  • Servings: 4 meal-size salads or 8 side salads; 2 cups dressing
  • Print

Ingredients:

  • 2 cups cooked chicken [leftovers from a roasted chicken work great]
  • 1 cup bbq sauce [I used Sweet Baby Ray’s]
  • 1 large tomato, chopped
  • 2 cups black beans, drained and rinsed
  • 3 cups fresh corn, cut from 3 ears of corn
  • 1 head romaine lettuce
  • Jalapeno Ranch Dressing, recipe below

Directions:

Stir together chicken and bbq sauce in a skillet set over medium-low heat. Heat for 5-7 minutes or until heated through, stirring occasionally. Meanwhile, toss together romaine lettuce and Jalapeno Ranch Dressing in desired amounts. Divide lettuce between four plates, then top each with a quarter of all ingredients: chicken, tomato, black beans, and corn. Toss together and enjoy!

Jalapeno Ranch Dressing [slightly adapted from The Lively Kitchen]

Ingredients:

  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 cup buttermilk [for this I use real buttermilk, a substitute could be kinda weird]
  • 4 green onions, chopped, with white bottoms removed
  • 1/2 of a chopped, deseeded jalapeno [~2 tablespoons]
  • 3 tablespoons  fresh parsley, chopped [or 1 teaspoon dried parsley]
  • 1/3 cup fresh Thai basil, chopped [or cilantro, basil, etc.]
  • 1 clove garlic, minced
  • freshly ground black pepper to taste

DIrections:

Place all ingredients in a blender or food processor and pulse until smooth. An immersion blender works great!

Dressing thickens in the fridge so add some extra buttermilk before serving leftovers as desired.

Strawberry Yogurt

Ben and I are yogurt-a-holics. Seriously, at any given time we have about half a shelf of our fridge full of yogurt. Tubs of plain or vanilla. Individual cartons of sundry flavors. It is insane! For awhile, I even made our own yogurt in the crockpot, then strained it out to make homemade Greek yogurt. While that stuff was good, it was time consuming and I fell out of the habit. But our other habit [buying a bazillion flavors at the store] is expensive. What’s a girl to do? Make my own toppings, of course!

Back in the days of homemade yogurt I purchased multiple flavors of jam to stir into homemade yogurt. That was easy, but pricy, and took up tons of valuable fridge space. This time, I had some frozen fruit for smoothies and made up a quick strawberry puree with just a bit of sugar, lemon juice, and cinnamon. Hardly a recipe, yobut this sauce is a perfect addition to those store bought tubs of plain yogurt and I thought some of you may enjoy it too! Lately I’ve been prepping mason jars of strawberry yogurt on the weekend and enjoying them at work all week long. For an extra treat, add some homemade granola or a few mini chocolate chips! Yum!

Strawberry Yogurt

Ingredients:

  • 2 cups frozen strawberries
  • 1 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 32 ounces plain yogurt [regular or greek]

Directions:

In a nonreactive saucepan, combine strawberries, lemon juice, sugar, and cinnamon. Let sit at room temperature for about 30 minutes to let berries defrost, then set over low heat, stirring constantly, until sugar melts and berries begin to break down. Gently break larger berries apart with a wooden spoon. Pour into a small bowl to cool.

Meanwhile, divide yogurt between 6 containers [1 cup/8 ounces each]. When strawberry sauce has cooled, top yogurt with 2-3 tablespoons strawberry sauce. You may have a little sauce leftover. Cover and refrigerate until ready to enjoy.

Time: 60 minutes [10 minutes active].
Yield: 6 servings yogurt, approximately 1 cup strawberry sauce.

I made these cookies for the 2013 Great Food Blogger Cookie Swap, and sent them to Alicia at Balancing Motherhood [who I found out is a fellow KD sister! The Great Food Blogger Cookie Swap 2013

I’m usually wary of baking with nuts and dried fruit, even though I love both on their own. I guess I associate nuts and dried fruit in sweets with old people cooking, or something weird like that [no idea why]. I’ve been trying to think of an exception for a good five minutes, but no can do. WAIT! THESE cookies are the exception. The nuts and dried fruit are totally necessary for adding the right amount of crunch to the chewy citrus butter cookies. If you don’t like cranberries and pistachio, feel free to swap out your favorite alternatives. Cherry-pecan? Blueberry-walnut? Whatever your little heart dreams up is what you should make. Unless you like directions. Then stick with cranberry-pistachio. 🙂

Cranberry-Pistachio Citrus Butter Cookies [from Vanderbilt Wife]

Ingredients:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 3/4 cup brown sugar, packed
  • 1/4 cup milk
  • 2 tablespoons lemon juice
  • zest of 1 orange
  • 1 egg
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup pistachios, roughly chopped
  • 1 cup dried cranberries

Directions:

Heat oven to 375 degrees. Line cookie sheets with parchment paper or silpats.

Place butter and sugars in a bowl and cream with an electric mixer until fluffy. Add milk, lemon juice, orange zest, and egg, then mix on low to combine.

Add flour, baking powder, and baking soda, then mix on low until combined. Fold in pistachios and cranberries with a wooden spoon.

Spoon onto cookie sheets by tablespoons. Bake for 10-12 minutes, or until edges are brown. Centers may look a little soft. Let rest on cookie sheets for 3-4 minutes before moving to cooling rack. Store in airtight container.

Time: 30 minutes.
Yield: 3 dozen cookies.

Notes: Dough can get pretty soft, so just pop in the refrigerator between batches. These cookies freeze and ship well, too!

Sweet ‘n Spicy Apple BBQ Chicken & Slaw

Ben and I are big barbecue fans. Seriously, major barbecue fans. It’s one meaty dish we can both agree on. Ben loves a good brisket or pulled pork while  I’m more partial to chicken but occasionally can be swayed to a more “hearty” meats. In our four years’ of married life, we’ve enjoyed barbecue in many, many ways… at restaurants, homemade, semi-homemade, and store-bought. Homemade has always been the best, because seriously. Indiana. Not exactly a state renowned for its barbecue. BUT wait. I just realized that my homemade might not be quite as good as what’s available locally anymore. Even though this homemade Sweet ‘n Spicy Apple BBQ Chicken & Slaw is pretty darn fabulous.

Why, you ask? Because Ben and I are moving down south! To Nashville, Tennessee. On Friday! As in, later this week. Ahhhhhh. [Cue frantic packing… because who is ready to go any sooner than they have to be? Not me. Ha!] Now, I know that the politics of barbecue, or barbeque, or BBQ, or whatever you call it run deep, and vary by region, cooking method, etc. And I realize that true barbecue connoisseurs might not consider this “real” barbecue because it’s made in just an hour or so, in the oven. To them I say “bah.” Or rather, Ben says “bah.” I just say it’s good. It’s sweet, spicy, and utterly addicting. If I do say so myself, adding an apple to the chicken as it cooks was an utterly genius move.

Speaking of moves, we’re moving because I accepted a position earlier this month at a university library in Nashville. It’s been a crazy few weeks of packing, finding a new apartment, trying to sublet our current apartment, saying goodbye to friends and family and our favorite local Bloomington spots, and a myriad of other details… some fun and others not so fun. But we are so excited for this new adventure. There’s no one I’d rather share it with than this guy!

Ben is simply the best. 🙂 As is this barbecue. If you make it, don’t forget the slaw. It’s the perfect tangy, crisp accompaniment to the sweet ‘n spicy chicken. Kinda like I am to Ben. Or he is to me? I’m not quite sure that comparison is valid, but my mind is muddled from all this packing. So there you have it. Our big move, aka the reason I haven’t been blogging much lately. Sweet 'n Spicy Apple BBQ Chicken & Slaw

  • Servings: 4-6

Ingredients:

for the chicken

  • 2 tablespoons extra virgin olive oil
  • 1 small onion, diced
  • 1 small apple, chopped
  • 3 cloves garlic
  • 2 pounds chicken thighs
  • 6 ounces BBQ sauce of choice [I used a local Spicy Apple BBQ Sauce, but for something similar you could use this recipe]
  • freshly ground black pepper
  • extra sauce for serving

for the slaw

  • 2 cups red cabbage, chopped/shredded
  • 2 cups green cabbage, chopped/shredded
  • 1 small apple, diced
  • 1 stalk celery, diced
  • 2 stems basil, leaves torn [~ 1/4 cup]
  • 1/4 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • a couple dashes Sriracha
  • freshly ground black pepper

Directions:

Preheat oven to 325 degrees.

Heat olive oil over medium heat in an oven-proof Dutch oven or pot with tightly fitted lid. Add onion and apple and cook until softened, about 5 minutes. Then add garlic and cook for another minute. Add chicken and BBQ sauce and toss to coat. Season with pepper. Remove from heat, cover, and place in oven for 90 minutes.

Meanwhile, make the slaw. Toss together cabbages, apple, celery, and basil. In a small bowl, whisk together mayonnaise, vinegar, lemon juice, maple syrup, and Sriracha. Pour dressing over cabbage mixture [you may not need it all] and season with pepper to taste. Cover and refrigerate until ready to serve.

When chicken is done cooking, shred with two forks carefully in the pot, or remove to a cutting board to shred. Return chicken to pot and then serve with slaw and extra BBQ sauce as desired.

Note: For more tender chicken, reduce heat to 200 degrees after it has fully cooked and leave chicken in oven, covered, for another hour. The chicken is still delicious after 90 minutes but it does shred a little easier later on.
