Greek Orzo Pasta Salad

So, I used to post once a month on a blog called Today’s Housewife. In fall 2012, the group decided together to stop posting due the busyness of life and families and such. Though sad, I enjoyed being part of the group. As of early January, the blog was officially taken down. But I don’t want to lose my recipes, so periodically I will be reposting them on here. Enjoy!

My husband and I each take our lunches with us almost everyday, him to work and me to grad school. Not only is it less expensive to pack lunches, but it’s a lot healthier (and tastier) than eating out as long as you pack the right things. I discovered early on in our marriage that the best way to ensure that we each had delicious, filling lunches that would rival anything at a restaurant was to spend some time in advance doing some lunch preparation. So I started spending an hour or so every Sunday after church prepping our lunchtime vegetables and making a grab-and-go main course option. Then, every week night while we’re cooking dinner or cleaning up, we assemble our lunches for the next day. Having components in the fridge ready to go makes it a snap!

Pasta salads are one of my top choices for packed lunches as they are good served hot or cold, are customizable, and can be quite filling depending on the ingredients. I love that I can make a big batch to eat from throughout the week. This Greek-inspired dish was born out of the need to finish some random ingredients taking up space in my fridge such as a jar of sun-dried tomatoes and Kalamata olives that I used in a recent dinner, Pantry Pasta for Two. Each bite is a little different, and the sweet tang of lemon and tomatoes coupled with the bite of olives and the rich flavor of feta cheese is incredible. You’ll have to try it to believe it, but one bite and you’ll be hooked. It’s like a trip to the Greek Isles without every leaving your lunchbox! Not that I’ve ever been… (hint, hint husband!) I’m not sure this is a super kid-friendly dish depending on picky eaters’ palates, but I think it’d be great for girls’ lunches or family gatherings. Enjoy!

Greek Orzo Pasta Salad

  • Servings: 4-6

Ingredients:
  • 1 cup orzo pasta, uncooked (or any small pasta)
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil (I used the oil that my tomatoes were packed in for extra flava!)
  • zest of 1 large lemon (maybe a couple tablespoons?)
  • juice of 1 large lemon (perhaps 1/4-1/3 cup?)
  • 1/3 cup Kalamata olives, chopped
  • 1/3 cup spinach leaves, torn and packed
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon dried parsley
  • freshly ground black pepper
  • 1/2 cup pasta water, reserved
Directions:
Prepare orzo according to package directions. Before draining, be sure to reserve 1/2 cup pasta water. If you’re like me and don’t have a fine strainer, place a (unused) coffee filter inside your regular strainer. Then drain your pasta carefully so as not to tear the coffee filter and spoon the pasta into a medium bowl. Immediately stir in sun-dried tomatoes, olive oil, olives, lemon zest, spinach, and parsley. Mix gently to combine, then add lemon juice. Add feta cheese after a minute or so to let the pasta cool off (unless you don’t mind melted feta cheese). If needed, incorporate a little pasta water to make sure everything is fully coated, especially if you’ll be storing the salad for more than a day, as the sauce tends to be absorbed by the noodles over time. I used about 2-3 teaspoons of water. Season with black pepper to taste. Cover and refrigerate for at least an hour before serving.

Black Bean-Pumpkin Soup

Updated March 30, 2014… so today, I was looking through some blog pics and realized I made a terrible error! I hope you’re okay with another soup recipe this late in March! If you aren’t, look away. But be forewarned: you’ll miss some awesome soup. It was snowing in Nashville yesterday [not enough to stick, but still], so soup is entirely justified I think!

Earlier in the year, my mom texted me a picture of her dinner: a delightful orange-y colored soup. I asked for the recipe and received a text with a picture of the recipe, which I immediately made for lunch the next day. Yay for iPhones and technology! 🙂 That soup is the one before your very eyes now… a creamy, flavorful, filling Black Bean-Pumpkin Soup. I’ve made plenty of black bean and pumpkin soups in my day–but never together, and never this good. The soup is a cinch to throw together and definitely gets better as it sits. With just a hint of spice and a bit of sweetness, this soup is unlike any I have ever tasted. Next time I make it I will be sure to stock up on sour cream, green onions, and pumpkin seeds because the [unpictured] toppings are the very best part! Enjoy!

Black Bean-Pumpkin Soup

  • Servings: 8 servings/2 quarts

slightly adapted from a magazine via my mom

Ingredients:

  • 2 – 15 ounce cans black beans, rinsed and drained
  • 1 – 15 ounce can diced tomatoes, drained
  • 2 cups loosely packed spinach
  • 2 tablespoons olive oil [STAR Fine Foods Grilling Cuisine Cooking Oil is what I used; extra virgin would also work]
  • 2 medium onions, finely chopped
  • 1 jalapeno, deseeded [optional]
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 3 cups chicken [or vegetable] broth
  • 1 – 15 ounce can pumpkin puree
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon pepper
  • 1-2 tablespoons molasses or bourbon [optional]
  • sour cream, for topping
  • sliced green onions, for topping
  • pumpkin seeds, for topping

Directions:

In a food processor, combine black beans, tomatoes, and spinach. Process until smooth.

In a Dutch oven, heat olive oil on medium. Add onions and jalapeno [if using] and cook until soft. Add garlic and cumin and cook for another minute, until fragrant. Then stir in broth, pumpkin, vinegar, and pepper. Bring to a boil then cover and reduce to a simmer for 20 minutes.

Remove from heat and stir in molasses if using, then serve with sour cream, green onions, and pumpkin seeds as desired.

Mystery Dish: Spicy Chicken, Spinach, and Corn Enchiladas

This month for Mystery Dish, Christine from I Dig Pinterest and I Did it Too was the head honcho. She gave us the following ingredients to work with: fresh mushrooms, pork, spinach, cream cheese, pineapple, butterscotch chips, macadamia nuts, Sriracha, Ritz crackers, and tortillas. When I first saw the list, I had dreams of a fabulous dessert. But things just didn’t work out due to family and work things… so dinner it was! But shhhh! Don’t tell these enchiladas they were a second choice because they’d be oh so sad. They were SO tasty and SO spicy and SO worth it.

The two ingredients I used from Christine’s list were spinach and tortillas. I thought about also using Sriracha in the spicy enchilada sauce, but after a quick test taste, I realized there was no way I’d be able to handle the heat if I added that. 🙂 So two ingredients it was! Obviously tortillas are an essential part of enchiladas–but spinach? Sounds a little weird. But I’m never one to shy away from adding veggies where they are unexpected. The combination of chicken, spinach, and corn made for a delightful enchilada filling, and when we had a little leftover, I saved it for quesadillas later in the week. Also an excellent choice for this filling! If a super spicy sauce isn’t your thing, feel free to buy some or try my [old old old] recipe for a classic enchilada sauce.

Spicy Chicken, Spinach, and Corn Enchiladas

Ingredients:

  • 4 ounces tomato paste
  • 1 cup tomato juice or water
  • 1/2 cup onion, roughly chopped
  • 1/4 cup green pepper, roughly chopped
  • 1 clove garlic
  • 1-2 chipotle peppers in adobe sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 6 ounces cooked chicken, shredded
  • 2 handful spinach, torn
  • 1 cup corn
  • 1/2 cup salsa
  • 8 flour tortillas
  • 1 cup white cheddar cheese [pepperjack or a Mexican blend would also be good]

Directions:

Preheat oven to 350 degrees.

In a food processor, combine tomato paste, tomato juice, onion, green pepper, garlic, chipotle peppers, chili powder, cumin, and oregano. Process until smooth. Spread 1/3 of the enchilada sauce in the bottom of a 9×13 baking dish.

In a bowl, stir together chicken, spinach, corn, and salsa. Divide mixture between the tortillas, then place seam side down in the baking dish. Top with remaining enchilada sauce and the cheese.

Bake for 25-30 minutes or until cheese is melted and bubbly.

Time: 45 minutes [15 minutes active].

Yield: 4 servings.

Thai Tofu Ramen

So, last month I had a Rachael Ray Magazine recipe on my weekly menu plan. I was all excited to make Tofu Ramen Soup with Spinach, but then I saw that Hannah had made that very soup recently… and thought it was basically a flop. A good idea as a nod towards a healthified college classic, but a flop nonetheless. Good thing I found this out before I made it. Thanks to Hannah, I can present you with this amazing Thai-inspired Tofu Ramen.

Each noodle-y slurp of this spicy, garlicky, gingery broth took me back to my sophomore year of college when, sick of dorm food, I enjoyed a steady rotation of ramen, easy mac, and oatmeal for lazy dinners or weekend meals. Prepared in the microwave, of course. Fortunately, this ramen has grown up and gotten much healthier, but still delivers in terms of ease, taste, and comfort.  Instead of just a salty bowl of meat-flavored noodles with a few dehydrated vegetables thrown in, this ramen has tons of personality–chunks of carrots, celery, and mushrooms. Spinach! Cilantro! Tofu! A little coconut milk to add a bit of creamy sweetness and balance out the spice… and ta da! You have an easy, flavorful soup that is darn near perfect comfort food.

Don’t be intimidated by the long list of ingredients, including the scary fish sauce. This soup certainly comes together quickly and the fish sauce? Well, all I can say is a little goes a long way. Just stir it in quickly and ignore the smell, because you’ll love the taste! All the flavors go so well together, and definitely improve over time, so leftovers will be really coveted. At least they were here! Enjoy!

Thai Tofu Ramen [adapted from Rachael Ray Magazine]

Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 3/4 ounce freshly grated ginger
  • 2 large cloves garlic, minced
  • 1 teaspoon crushed red pepper
  • 7 cups low-sodium chicken broth [or vegetable broth]
  • 3/4 cup carrots, peeled and diced
  • 1 stalk celery, minced
  • 1/4 pound mushrooms, sliced and cleaned
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon fish sauce
  • 1/2 pound tofu, drained, pressed, and cubed
  • 4 ounces fresh spinach
  • 1/4 cup cilantro, minced
  • 1 bunch scallions, minced
  • 3 packages ramen noodles [uncooked, broken, noodles only]
  • 3/4 cup lite coconut milk

Directions:

Heat oil in a medium pot set over medium heat. Add ginger, garlic, and crushed red pepper and saute for 1 minute until fragrant. Add chicken broth, carrots, celery, mushrooms, soy sauce, and fish sauce. Cover and simmer for 8-10 minutes, or until vegetables are soft.

Next, stir in tofu, spinach, cilantro, scallions, and ramen. Cover again and simmer 3-5 minutes until noodles are tender. Reduce heat to low and gently stir in coconut milk. Simmer for another minute or so until hot, then season with additional crushed red pepper or coconut milk as desired.

Time: 30 minutes.

Yield: 6-8 servings.

10 Minute Lunch #5: Black Bean Wraps

So…. I totally realize black bean wraps are nothing new, nothing exciting, nothing original. You can probably google a bazillinon kajillion different variations right now. Or you don’t even have to, because who really needs a recipe for a simple black bean wrap?

The truth is… you don’t. And the truth also is… I don’t have and/or use one either.

But guess what? I’m sharing this non-recipe anyways… for a couple reason. First of all, I realized over the long weekend that I hadn’t shared any of my 10 Minute Lunches with you in way too long. Like, two months too long. Whoops. 😦 And secondly, I eat this easy black bean wrap [or a variation thereof] for lunch quite often and find it quite tasty [especially when there are no leftovers that sound good or I’m not feeling particularly inspired and needalunchlikenow.] Since I assume I’m not the only one who ever finds themselves in that situation…uninspired, hungry, pressed for time. If that’s you, then this go-to non-recipe recipe for black bean wraps is for you.

Maybe this is a little simplistic, but so what? It’s packed with flavor, texture, and tons of good-for-you nutrients and protein. Simply top a whole wheat tortilla with Mexican-spiced smashed black beans and lots of fresh veggies for a lunch that you’ll be looking forward to all morning long. I used spinach, red onion, bell pepper, avocado, and tomato, but feel free to use whatever strikes your fancy. Top your wrap with some cheese and you’re good to go! This lunch is filling, portable, inexpensive, and packed with fresh flavor. You can heat it up or eat it cold, depending on your preference and work situation… it’s great either way. I hope you love it as much as we do!

Black Bean Wraps

Ingredients:

  • 1/3 cup black beans, rinsed and drained
  • desired seasonings: garlic powder, cayenne pepper, cumin, oregano, crushed red pepper, etc. + lime juice [I used ~ 1 1/2 teaspoons total, plus a splash of juice]
  • whole wheat tortilla
  • baby spinach
  • red onion, diced
  • avocado, sliced
  • roma tomatoes, sliced
  • red bell pepper, sliced
  • grated cheese [I used cheddar + pepperjack]
  • salsa or sour cream, as desired

Non-directions:

  • Mash together black beans with seasonings and a little lime juice.
  • Place baby spinach on a whole wheat tortilla, then top with black bean mixture. Add red onion, avocado, tomato, bell pepper, and cheese along with salsa or sour cream if desired.
  • Roll up and enjoy!

Time: 5 minutes.

Yield: 1 delicious lunch! [or more if you multiply the black bean mixture]
