A creamy, tangy dressing filled with lots of fresh herbs and onions… green goddess dressing is divine! 

Hello, friends! What a week! We just moved and are getting settled in our new home. But I couldn’t miss out on the Secret Recipe Club this month so I made my recipe wayyy in advance. So unlike me. 🙂 This month I was given Jenna’s blog, The Painted Apron. Jenna is a lovely woman who gets to divide her time between Birmingham and Orange Beach, Alabama. She loves her family [just browse her blog for adorable grandkid photos! Awww.], football, and hospitality. My husband was very sad to learn that she’s an Alabama fan and wants to say GO BUCKS! OH! He’s a major Ohio State fan and is still basking in the glow of Big Ten > SEC victory in the National Championship last January.

All that aside, it was so fun to check out Jenna’s blog this month. Some of the recipes that caught my eye included: Creamy Corn Dip, Cranberry Salsa [must make at Christmas!], Cinnamon Roll & Sausage Breakfast Pudding [this would be an awesome dish to make while on vacation… we always stay in condos so low-prep recipes are great!], Apple Pear and Walnut Gorgonzola Galette, and Savory Apple Pie Quesadilla. I must have been in a fall mood when I browsed her blog, but I eventually settled on this great salad dressing. I know I’ll be able to enjoy it all summer long!

I’ve heard of Green Goddess Dressing before, but don’t really think I’ve ever had it before. Apparently it was concocted in the 1920s in San Francisco as part of a movie celebration. Fun! Truly, it reminds me of a more sophisticated version of ranch dressing. Creamy, herby, and tangy, this dressing is a fun creamy topping for salad. Traditionally, this dressing is made with sour cream and mayonnaise, but this time I used greek yogurt instead of sour cream because I had it on hand. We have enjoyed this dressing for the past two weeks on any and every salad we can find… but the first time, it was fabulous on a salad made up of red leaf lettuce, sauteed asparagus, sliced radishes, chickpeas, crumbled feta, and sliced hard boiled eggs. No matter how you serve it, I’m sure you’ll enjoy it as much as we did! Thanks, Jenna, for a great recipe. 🙂

Green Goddess Dressing

  • Servings: 1.5 cups
  • Print

from The Painted Apron

Ingredients:

  • 1/2 cup mayonnaise
  • 1/2 cup Greek yogurt or sour cream
  • 1/4 cup chopped basil [or basil paste from Gourmet Garden]
  • 1/4 cup chopped parsley [or parsley paste from Gourmet Garden]
  • 1 tablespoon anchovy paste
  • 4 tablespoons lemon juice [from about 2 lemons]
  • 1 clove garlic, minced
  • crudites or salad, for serving

Directions:

Combine all ingredients in a jar or small bowl, then process with an immersion blender until smooth. Serve as a dressing or dip. I enjoyed my dressing with this Asparagus and Chickpea Salad from A Nutritionist Eats [ingredients: red or butter lettuce, sauteed asparagus, sliced radishes, chickpeas, crumbled feta, and sliced hard boiled eggs].

Dressing keeps well in the fridge for about a week. Enjoy!

I’ve been sitting here trying to figure out how to tell you about this pasta, but it’s just so hard. It’s just so hard because it’s just so good! I mean, just look at the ingredients. What’s not to love? Cheese, chicken, tomatoes, pasta, half and half… simple, flavorful ingredients that always taste good–well, now they taste great together!

Truly, this pasta is the whole shebang… the whole package… everything you could ever love or want or need–and more! Besides being filled with delicious ingredients, it’s SO easy to make that it’s almost foolproof. If you can boil water you can make this delicious dish. I promise! Chicken Mozzarella Pasta with Sundried Tomatoes

  • Servings: 4

Ingredients:

  • 3-4 ounces sundried tomatoes, either packed in oil or dried like the ones from Trader Joe’s, chopped
  • 2 tablespoons oil [drained from tomatoes or extra virgin olive oil + some Italian seasoning]
  • 1 pound chicken, sliced into thin, bite-sized pieces
  • paprika
  • freshly ground black pepper
  • 3-5 cloves garlic, minced
  • 1 cup half and half
  • 1 cup shredded Mozzarella or Italian blend cheese
  • 8 ounces small-medium pasta [I used campanelle, but rotini or penne would be great]
  • 1 tablespoon dried basil [or more fresh basil]
  • 1/4-1/2 teaspoon crushed red pepper flakes
  • 1/2-1 cup reserved pasta water

Directions:

If using sundried tomatoes in oil, drain oil and use 2 tablespoons for the first step. If not, disregard and use extra virgin olive oil plus a bit of Italian seasoning.

Set a large pot of water to boil for pasta and prepare according to package directions, reserving about 1 cup cooking water when finished.

In a large skillet set over medium-high heat, heat oil until glistening. Add chicken, then season with paprika on top side. Cook for one minute, then flip and season the other side with paprika. Reduce heat to medium-low and add tomatoes and garlic. Continue cooking for about 3-4 minutes until chicken is nearly fully cooked. Add half and half to the skillet and bring to a gentle boil. Then stir in cheese, continuing to stir until all cheese melts.

By this point, the pasta should be about done. Drain pasta, reserving about 1 cup of cooking water.

Add about 1/2 cup of pasta water to chicken and sauce mixture in the skillet. Stir to incorporate, then season with basil and red pepper flakes. Taste and add more seasoning if desired, then fold in cooked pasta. Stir together well and reduce heat to a simmer. Simmer for 3-5 minutes, then serve and enjoy!

Mystery Dish: BBQ Chicken Salad with Jalapeno Basil Ranch Dressing

Today I have the BEST SALAD EVER to share with you!! I am so psyched, I can hardly wait to tell you about it [even though it is not original at all. But that’s okay.] But first, this recipe qualifies for not just one, but two challenges. Woohoo! First of all, I created this recipe for Mystery Dish. But since it includes a fantastic homemade ranch dressing, it also helps fulfill one of my 30 before 30 goals. Score!

This month for Mystery Dish, Chez Catey Lou is our host. Cate is so sweet and gave us such a creative list to work with! We had to use at least two ingredients from this list: raspberries, peanut butter chips, edamame, lemon, yeast, whole wheat pastry flour, bacon, buttermilk, basil, and zucchini. There were a thousand ways I thought about going [I probably say that every month…sorry] but my craving for a salad won out in the end. I used a few of Cate’s ingredients [lemon, buttermilk, and basil] to make an awesome Jalapeno Ranch Dressing to dress up a BBQ Chicken Salad.

I have long searched for a good homemade ranch dressing. I’ve made this recipe once before and let me tell you..it’s a keeper! It’s creamy, spicy, and best of all… clean! No weird mystery ingredients in the powder, thankyouverymuch. The key to this recipe is the jalapeno. It just elevates this creamy, herby dressing with a bit of spice. Oh so good!

You know what else is good? This salad! I know a zillion restaurants have variations of BBQ Chicken Salad and this was mine. I just used seven ingredients so it’s pretty basic: lettuce, chicken, BBQ sauce, corn, tomatoes, black beans, and ranch dressing. You could also add avocados, onions, bacon, or anything else that strikes your fancy.

I kept it simple though so the flavors could really shine. You will really want to make it again and again. One bite of this and Ben was swooning. Seriously! This is a man’s salad, and definitely fancy enough for a restaurant. Hope you enjoy it as much we do!

BBQ Chicken Salad with Jalapeno Ranch Dressing

  • Servings: 4 meal-size salads or 8 side salads; 2 cups dressing
  • Print

Ingredients:

  • 2 cups cooked chicken [leftovers from a roasted chicken work great]
  • 1 cup bbq sauce [I used Sweet Baby Ray’s]
  • 1 large tomato, chopped
  • 2 cups black beans, drained and rinsed
  • 3 cups fresh corn, cut from 3 ears of corn
  • 1 head romaine lettuce
  • Jalapeno Ranch Dressing, recipe below

Directions:

Stir together chicken and bbq sauce in a skillet set over medium-low heat. Heat for 5-7 minutes or until heated through, stirring occasionally. Meanwhile, toss together romaine lettuce and Jalapeno Ranch Dressing in desired amounts. Divide lettuce between four plates, then top each with a quarter of all ingredients: chicken, tomato, black beans, and corn. Toss together and enjoy!

Jalapeno Ranch Dressing [slightly adapted from The Lively Kitchen]

Ingredients:

  • 1/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 cup buttermilk [for this I use real buttermilk, a substitute could be kinda weird]
  • 4 green onions, chopped, with white bottoms removed
  • 1/2 of a chopped, deseeded jalapeno [~2 tablespoons]
  • 3 tablespoons  fresh parsley, chopped [or 1 teaspoon dried parsley]
  • 1/3 cup fresh Thai basil, chopped [or cilantro, basil, etc.]
  • 1 clove garlic, minced
  • freshly ground black pepper to taste

DIrections:

Place all ingredients in a blender or food processor and pulse until smooth. An immersion blender works great!

Dressing thickens in the fridge so add some extra buttermilk before serving leftovers as desired.

Sweet ‘n Spicy Apple BBQ Chicken & Slaw

Ben and I are big barbecue fans. Seriously, major barbecue fans. It’s one meaty dish we can both agree on. Ben loves a good brisket or pulled pork while  I’m more partial to chicken but occasionally can be swayed to a more “hearty” meats. In our four years’ of married life, we’ve enjoyed barbecue in many, many ways… at restaurants, homemade, semi-homemade, and store-bought. Homemade has always been the best, because seriously. Indiana. Not exactly a state renowned for its barbecue. BUT wait. I just realized that my homemade might not be quite as good as what’s available locally anymore. Even though this homemade Sweet ‘n Spicy Apple BBQ Chicken & Slaw is pretty darn fabulous.

Why, you ask? Because Ben and I are moving down south! To Nashville, Tennessee. On Friday! As in, later this week. Ahhhhhh. [Cue frantic packing… because who is ready to go any sooner than they have to be? Not me. Ha!] Now, I know that the politics of barbecue, or barbeque, or BBQ, or whatever you call it run deep, and vary by region, cooking method, etc. And I realize that true barbecue connoisseurs might not consider this “real” barbecue because it’s made in just an hour or so, in the oven. To them I say “bah.” Or rather, Ben says “bah.” I just say it’s good. It’s sweet, spicy, and utterly addicting. If I do say so myself, adding an apple to the chicken as it cooks was an utterly genius move.

Speaking of moves, we’re moving because I accepted a position earlier this month at a university library in Nashville. It’s been a crazy few weeks of packing, finding a new apartment, trying to sublet our current apartment, saying goodbye to friends and family and our favorite local Bloomington spots, and a myriad of other details… some fun and others not so fun. But we are so excited for this new adventure. There’s no one I’d rather share it with than this guy!

Ben is simply the best. 🙂 As is this barbecue. If you make it, don’t forget the slaw. It’s the perfect tangy, crisp accompaniment to the sweet ‘n spicy chicken. Kinda like I am to Ben. Or he is to me? I’m not quite sure that comparison is valid, but my mind is muddled from all this packing. So there you have it. Our big move, aka the reason I haven’t been blogging much lately. Sweet 'n Spicy Apple BBQ Chicken & Slaw

  • Servings: 4-6

Ingredients:

for the chicken

  • 2 tablespoons extra virgin olive oil
  • 1 small onion, diced
  • 1 small apple, chopped
  • 3 cloves garlic
  • 2 pounds chicken thighs
  • 6 ounces BBQ sauce of choice [I used a local Spicy Apple BBQ Sauce, but for something similar you could use this recipe]
  • freshly ground black pepper
  • extra sauce for serving

for the slaw

  • 2 cups red cabbage, chopped/shredded
  • 2 cups green cabbage, chopped/shredded
  • 1 small apple, diced
  • 1 stalk celery, diced
  • 2 stems basil, leaves torn [~ 1/4 cup]
  • 1/4 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon maple syrup
  • a couple dashes Sriracha
  • freshly ground black pepper

Directions:

Preheat oven to 325 degrees.

Heat olive oil over medium heat in an oven-proof Dutch oven or pot with tightly fitted lid. Add onion and apple and cook until softened, about 5 minutes. Then add garlic and cook for another minute. Add chicken and BBQ sauce and toss to coat. Season with pepper. Remove from heat, cover, and place in oven for 90 minutes.

Meanwhile, make the slaw. Toss together cabbages, apple, celery, and basil. In a small bowl, whisk together mayonnaise, vinegar, lemon juice, maple syrup, and Sriracha. Pour dressing over cabbage mixture [you may not need it all] and season with pepper to taste. Cover and refrigerate until ready to serve.

When chicken is done cooking, shred with two forks carefully in the pot, or remove to a cutting board to shred. Return chicken to pot and then serve with slaw and extra BBQ sauce as desired.

Note: For more tender chicken, reduce heat to 200 degrees after it has fully cooked and leave chicken in oven, covered, for another hour. The chicken is still delicious after 90 minutes but it does shred a little easier later on.

Fresh Tomato and Mozzarella Crostini

We spent last weekend with my family. Not only did we have a great time, but we also [as usual] had some pretty amazing food. My mom and sister love cooking just as much as I do… so it’s only natural. 🙂 One of the best things we enjoyed was possibly the simplest–but simple doesn’t have to mean boring. Often, simple means fresh, light flavors that are perfectly pared… and are complex in their own way. Well, at least that’s the case with this quick crostini.

This crostini starts with toasted multigrain bread coated with tangy garlic, olive oil, and balsamic vinegar. Then, the bread is topped with sweet basil, creamy mozzarella, and right on top…a juicy, ripe tomato. But the tomato is not just an afterthought–it’s the highlight, its bright sweetness accentuated by the cool cheese and crusty bread.

Can anything really be better in the summertime?  I’m not really sure what… and even though these are definitely an elegant appetizer, perfect for a cocktail party or bridal shower… I have a sneaky suspicion that even kids would love them, since they look a bit like a fried egg on toast. Do they not? Who says tomatoes need to be red? 🙂 Whoever you make these for is sure to enjoy them. Tis the season! Tomato season, that is!

Fresh Tomato and Mozzarella Crostini [from Mom]

Ingredients:

  • 1/4 of a French baguette, cut into 1/2 inch slices [approximately 16 slices]
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 large clove garlic, smashed
  • 16 small/medium basil leaves
  • 2 ounces fresh mozzarella, sliced into 16 pieces
  • 8 small, bite-sized tomatoes, cut in half [I used sweet golden tomatoes but any cherry-type tomato will do]

Directions:

Preheat oven to 400 degrees. Place bread on a cookie sheet then bake for 6-8 minutes until toasted. Remove from oven and cool briefly, about 2 minutes.

In a small bowl, combine olive oil and vinegar.

Then, rub garlic on each slice of bread. Brush on oil and vinegar mixture, then top with a basil leaf, a slice of mozzarella, and a tomato half.

Serve immediately.

Time: 15 minutes.

Yield: 4 servings.

Notes: Recipe can easily be increased as needed.
