Mystery Dish: Sesame Ginger Shrimp Ramen Noodles

Ramen noodles can be classy too! They aren’t just college student food. These ramen noodles feature shrimp–REAL sesame ginger seasoned shrimp–and lots of yummy vegetables, all cooked in a delightful ginger-chili broth.

This dish is genius, if I do say so myself. I’ve made a fancified ramen dish before [check it out!] and ever since then, I’ve been dreaming about ramen noodles… but not the uber salty college kind. Ramen noodles with real food. Mmm!

But it wasn’t until this month’s Mystery Dish [hosted by Mary Frances of The Sweet {Tooth} Life] when one of our challenge ingredients included RAMEN NOODLES! Woot! Other ingredients we had to choose from included clams, blueberries, heavy whipping cream, chocolate chunks, potato chips, kale, almond butter, chiles, and orange juice. I used chili pepper paste and kale in this recipe too. Originally, I planned to make this a pretty simple kale ramen noodle dish with a chili pepper sauce. But then when cooking, I saw shrimp in the fridge… shrimp that I had been planning to use for the 2015 Healthy Solutions Spice Blends Blogger Recipe Challenge. Then I wondered… what would shrimp ramen taste like? Turns out, it’s pretty fabulous and I’m so proud to enter it in this awesome recipe contest as well as use it for Mystery Dish. 🙂 I didn’t intend to make one recipe for two events but it worked out really well!

Before the recipe, let’s talk about how flavorful these ramen noodles really are. Ramen noodles usually just have some sauce on them. Not mine! These ramen noodles begin with a flavorful ginger-chili broth, made with lots of fresh Asian/Thai ingredients like ginger, garlic, lemongrass, and chili pepper. Add in some fresh veggies [I used kale, mushrooms, and bell peppers] and some flavorful shrimp and you are set for one classy meal! Ben and I both agreed that the shrimp were the best part of the dish… right next to those slurpy ginger noodles, that is. 🙂

To make the shrimp so fabulous, I started with a quick marinade/rub. I used some of the usual suspects–soy sauce, rice wine vinegar, fresh ginger, lemongrass, chili pepper–as well as the star seasoning blend from Healthy Solutions… Sesame Ginger Tuna. This seasoning blend is super flavorful and zesty; it’s hard to believe it doesn’t contain sugar or salt.

I rubbed all this on some large shrimp and let it hang out while I whipped together the broth, then I sauteed up all the veggies and shrimp. There’s a lot going on in this dish, but with the common flavors–ginger, garlic, lemongrass, chili pepper… everything goes together SO well. And bonus! This dish comes together in about 30 minutes so it’s perfect for a weeknight family dinner. If you’re super organized, you could put the rub on the shrimp earlier in the day to infuse more flavor into them but that’s totally not necessary. Sesame Ginger Shrimp Ramen Noodles

  • Servings: 4

Ingredients:

for shrimp 

  • 1 1/2 tablespoons Healthy Solutions Sesame Ginger Tuna seasoning blend
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 1 1/2 tablespoons lemongrass paste [I used Garden Gourmet brand]
  • 1 tablespoon chili pepper paste [I used Garden Gourmet brand]
  • 1 pound fresh shrimp, peeled and devined [mine still had the tails on though]

for ginger-chili broth

  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated [from about 1-2 inches fresh peeled ginger]
  • 2 scallions, chopped – green and white parts separated
  • 1/2 tablespoon chili pepper paste [I used Garden Gourmet brand]
  • 4 cups chicken broth

for ramen

  • 1 tablespoon extra virgin olive oil
  • 4 ounces white mushrooms, cleaned and thinly sliced
  • 1 cup bell peppers, thinly sliced [I used the mini red, yellow, and orange peppers]
  • 1/2 tablespoon fresh ginger, grated [from about 1/2-1 inch fresh peeled ginger]
  • 1 teaspoon lemongrass paste [I used Garden Gourmet brand]
  • 1 teaspoon chili pepper paste [I used Garden Gourmet brand]
  • 2 cloves garlic, minced
  • 2 – 8 ounce packages ramen noodles, uncooked [any flavor – flavor packets are NOT used]
  • 1 cup kale, thinly sliced into ribbons and firmly packed
  • 1 tablespoon fresh lime juice
  • 1-2 teaspoons fish sauce, to taste
  • additional broken ramen noodles, for garnish
  • chopped cilantro, for serving

Directions:

In a medium bowl, whisk together Healthy Solutions Sesame Ginger Tuna seasoning blend, rice wine vinegar, soy sauce, lemongrass, and chili pepper. Add shrimp and toss together to coat. Set aside.

Next, prepare ginger-chili broth. In a saucepan, heat oil over medium heat. Add garlic, ginger, and the white part of the scallions. Cook, stirring constantly, for about one minute. Add chili pepper paste and chicken broth, and stir until it comes together. Turn heat to high and bring to a boil for another minute. Reduce heat to low and simmer while the rest of the dish comes together.

In a large skillet or wok, heat oil over medium heat. When hot, add mushrooms, peppers, ginger, lemongrass, and chili pepper. Saute for three to four minutes, then add garlic and cook an additional 30 seconds.

Next, cook the noodles. Break the noodles up and add them to the ginger-chili broth. Turn heat to medium-high, keeping just below a boil. Cook for 3 minutes then remove from heat.

While noodles are cooking, add shrimp to the veggies in the wok. Stir regularly for about three minutes or until shrimp are no longer pink. Next, reduce heat to low and pour ramen and broth in the pan. Add kale, lime juice, fish sauce, and most of the reserved green scallions from the broth. Stir then let rest for about a minute. Serve topped with additional broken ramen noodles, chopped cilantro, and green scallions. Enjoy!

Asian Turkey Meatballs with Carrot Rice

Flavorful Asian turkey meatballs served over carrot rice is an awesome, easy 30 minute weeknight dinner. Kids love it too!

I’ve made it more times than I can count, but it’s never appeared on the blog because I never get a photo before it’s gone-zo. It’s pretty simple, as most meatball dinners are, but it feels so special because of the Asian flavors and wonderful aromatic ingredients in the dish. The meatballs are zingy with just a hint of spice. If spice isn’t your thing, feel free to leave out the Sriracha or use less. Don’t be afraid of the fish sauce though–a little goes a long way to making the meatballs extra tasty! Just don’t smell it. Take my word on that one. Can you say gross?! 🙂

One of the best things about this dinner is that it’s SO adaptable. Normally I make the meatballs with ground turkey, but if that’s not your thing, use pork or chicken or a combination. I also love that the rice isn’t boring. I stir carrots and cilantro [or Thai basil] in for some extra flavor and texture. To make this a 30 minute meal, using white rice is key… but if you have more time, brown rice would work too. Sometimes I make the rice with another liquid besides water, like chicken broth or coconut milk, for a lil extra something. But even if you just make the rice plain, it’s still amazing!

I’ve done that so many times and have gotten rave reviews from everyone, including the kiddos! Just don’t forget the lime wedges. A squeeze of lime over the whole meal is essential! Enjoy!

Asian Turkey Meatballs with Carrot Rice

  • Servings: 4

Ingredients:

  • 1 cup white rice
  • 2 cups liquid for cooking rice – like water, chicken broth, or coconut milk
  • 1 carrot, shredded
  • 1/3 cup cilantro or Thai basil, chopped
  • 1/2 cup breadcrumbs
  • 1 pound ground turkey [pork works too!]
  • 2 green onions, green and white parts chopped and divided
  • 1/3 cup cilantro, chopped
  • 3 teaspoons fish sauce
  • 3 teaspoons Sriracha
  • 3 teaspoons sugar
  • 1 clove garlic, minced
  • 1 teaspoon fresh grated ginger, optional
  • 2 teaspoons canola oil
  • lime wedges, for serving

Directions:

Preheat oven to 450 degrees. In a large saucepan, combine 2 cups water [or coconut milk or chicken broth for extra flavor] and rice. Bring to a boil, stir, then cover and reduce to a simmer. Cook until rice is tender, about 15-20 minutes. Remove from heat and top with carrot and cilantro. Cover and let stand for 5 minutes, then stir to mix all ingredients and fluff with a fork.

Meanwhile, in a large bowl, combine breadcrumbs and 2 tablespoons water. Let stand for 5 minutes, then add turkey, white parts of the green onions, cilantro, fish sauce, Sriracha, sugar, garlic, and ginger if using. Gently stir to combine, then shape into 24 small meatballs.

In a large skillet, heat oil over medium-high heat. Work in batches to brown meatballs on all sides, then transfer to a large baking dish to cook for 10 more minutes in the oven, or until cooked through. Serve meatballs over rice with green onions and lime wedges.

One tailgating [or homegating] staple for me is dips. Cheesy, creamy, delectable dips that I can dunk tortilla chips in are my favorite thing ever! Notice that I didn’t say I’d dip veggies in dip. I’m not above healthifying a cheesy recipe, but I AM above dipping veggies in a cheesy dip. That’s just weird. For dips, tortilla chips > veggies, imo.

This Hot Mexican Quinoa Dip is full of all my favorite things! It’s a twist off of seven layer dip, and it’s even more delicious because it’s hot, gooey, and bubbly. I don’t think there are quite seven layers: black beans [pureed with garlic, cayenne, cilantro, and cottage cheese–weird-ish I know, but adds protein and makes ’em creamy], quinoa, cheese, bell peppers, salsa, avocado, tomatoes, green onion, and cilantro. I guess that’s nine layers! Extra yum, huh?

Ben and I ate almost the entire pan of this one Saturday night while watching a movie–it is that good! It almost reminds me of a black bean quinoa casserole that I’ve made before, except you eat it with chips so it’s extra fun. For some reason I feel a bit uninspired writing about it… but know this: it is amazing and addicting and perfect for anything from tailgating to a girls’ night in! Enjoy!

Hot Mexican Quinoa Dip

  • Servings: 16

from The Lean Green Bean

Ingredients:

for the beans

  • 2 cups black beans
  • 1 clove garlic
  • 1 teaspoon cayenne pepper
  • 1/4 cup cilantro
  • 1/2 cup cottage cheese
  • 1/4 cup water

for remaining ingredients

  • 1 cup quinoa, cooked
  • 1 cup shredded cheese – cheddar, Mexican blend, etc. your choice!
  • 1 bell pepper, diced
  • 1 cup salsa
  • 2 avocados, diced
  • 1 large tomato, diced
  • 1/4 cup cilantro, minced
  • 2 green onions, sliced
  • hot sauce, optional
  • tortilla chips, for serving

Directions:

Grease a 9×9 inch pan with cooking spray. Preheat oven to 350 degrees.

In a food processor, combine all ingredients for the beans and process until mostly all ingredients are incorporated. It doesn’t have to be completely smooth. Add extra water if necessary to thin it out.

Spread half of the bean mixture on the bottom of the pan. Top with half of the quinoa, half the bell pepper, half the cheese, and half the salsa. Repeat with remaining ingredients. Cover with foil and bake for 30 minutes.

Let cool for a few minutes, then top with avocados, tomatoes, cilantro, and green onions. Serve with tortilla chips and hot sauce if desired.

Crockpot Asian Pulled Chicken

Dust off your crockpot–this Asian Pulled Chicken is perfect for a chilly night and is a snap to put together!

I don’t do crockpot recipes that involve multiple steps. Isn’t the point of the crockpot to set it and forget it? So this recipe is super simple: place chicken in crockpot, top with a bunch of seasonings/sauces–without even mixing it!, cover, cook, enjoy. Perfect, huh?! Since I prefer to not even have to CHECK on crockpot meals while they’re cooking, I always like to use a bunch of sauce so the meat doesn’t dry out. For this recipe, I combined orange juice, rice vinegar, honey, and some spices with a myriad of Asian sauces I had hanging about in my pantry: soy sauce, hoisin, and oyster sauce…and some of Star Fine Foods’ Asian Cuisine Cooking Oil to give everything a little extra soy/ginger ooomph. If you don’t have all those sauces, don’t worry. One would be more than enough to make this almost barbecue-like sauce shine.

Once you open the lid, you’ll be greeted with the awesome aroma of chicken bathing in a sweet and tangy sauce. There’s citrus and a little heat and ginger and all sorts of good things in there, making that tender, melt-in-your-mouth chicken tastes even better than it smells. Since it was so effortless, I bet you’ll make this recipe again and again and again! Enjoy!

Crockpot Asian Pulled Chicken

  • Servings: 6

Ingredients:

  • 2 pounds chicken – a combination of chicken breast and thighs is good, or just one works too
  • 1/2 cup orange juice
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1/4 cup hoisin
  • 1/4 cup honey
  • 1/4 cup Asian Cuisine Cooking Oil by Star Fine Foods [or 1/4 cup olive oil with 1/4 teaspoon ground ginger + 1 teaspoon soy sauce]
  • 2 tablespoons oyster sauce
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ginger
  • 1/2 teaspoon red pepper flakes
  • rice, for serving
  • cilantro, for serving

Directions:

Place chicken in crockpot. Add all ingredients to crockpot [except rice and cilantro], then cover and cook on high for 4-5 hours or low for 6-8 hours. Gently shred chicken with a fork. Serve with rice and cilantro.

There’s nothing like a good appetizer to get the party started, right? I have a confession to make: I am terrible at appetizers. Most seem so finicky. If I’m hosting, I can totally make some hot little bites in the oven. But as things have it, in this stage of life, I rarely host [even though I’d love to]. We’re usually tasked with bringing x, y, or z to a gathering…and it’s just a pain to try to transport a hot dish, and sometimes those cute little bites just get gross if they sit for awhile. So cold dips are my go-to appetizers. Hummus, guacamole, salsa, I love them all. But they aren’t very fancy.

This Layered Asian Dip takes a normal dip up a notch! It’s a play off of Mexican Seven Layer Dip, even though it’s only a three layer dip. But it’s three layers of awesome: a creamy base of peanut butter and cream cheese; a wonderful medley of chicken, carrots, peanuts, cilantro, scallions, and aromatics like ginger and garlic; and last but not least–a slightly sweet, slightly spicy Asian dressing on top. This dressing is really what makes the dip, imo. Sure, chicken and peanut butter are staples of my diet, but the sauce brings everything together in a nice package. It’s tangy and delicious!

This dip is perfect for a party because you can make all the components ahead of time and chill them in the fridge, then go get ready, and then assemble at the last minute. I love it when things work out that way so I don’t have to worry about the dish losing its beauty while we’re waiting for things to get started. This dip is best enjoyed the day it is made, but the leftovers are still tasty the next day. By the way, you’ll have some extra sauce leftover–it’s perfect for tossing with some plain white rice and cooked veggies [I love those bags of frozen Asian vegetables] for a quick side dish during the week. Enjoy!

Layered Asian Dip

  • Servings: 8

Ingredients:

for sauce

  • 1/4 cup brown sugar, packed
  • 2 teaspoons cornstarch
  • 1 cup water
  • 1/4 cup ketchup
  • 2 tablespoons rice wine or white vinegar
  • 1 tablespoon Worcestershire sauce
  • 3 drops hot sauce [like Sriracha]

for topping

  • 3/4 cup cooked chicken, shredded
  • 1/2 cup shredded carrot
  • 1/4 cup chopped unsalted peanuts
  • 2-3 sliced scallions
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced

for base

  • 8 ounces softened cream cheese
  • 2-4 ounces creamy peanut butter [depending on how strong of a peanut butter flavor you like]
  • 2-3 tablespoons milk
  • crackers for serving

Directions:

First, prepare sauce. Whisk brown sugar and cornstarch together in a small saucepan set over medium heat. Pour in water, ketchup, vinegar, Worcestershire, and hot sauce. Cook for 5 minutes or until mixture thickens. Transfer to a small bowl to cool. When cool, cover and refrigerate to further thicken for 30 minutes or up to 24 hours in advance.

Next, stir together all topping ingredients in a bowl. Cover and refrigerate for 2-4 hours.

Just before serving, beat together cream cheese, peanut butter, and just enough milk to make mixture smooth. Spread on the bottom of a 10 inch pie pan or serving dish. Sprinkle topping over cream cheese mixture, then drizzle 1/2 cup sauce [there will be leftovers] on top.

Serve with crackers immediately.
