I love Pumpkin Spice Lattes from Starbucks like none other. I know, I know. They don’t contain pumpkin. I DON’T WANNA HEAR IT! They are delicious, and the lack of pumpkin isn’t my biggest gripe with them. But my biggest gripe with them is that they are so freaking expensive. Seriously, paying $5 for a grande isn’t something I do very often. So, I have a few of them every season, say that’s that, and go the DIY route to save some cash monies. I’ve made pumpkin spice lattes at home before with homemade syrup, but this method is MUCH easier for your pumpkin spice coffee fix. And bonus? It doesn’t have any weird ingredients–just your usual milk/cream or half and half, plus pumpkin, maple syrup, and spices. Easy easy!

Basically you just mix everything up on the stovetop and let it simmer away for a bit, then strain, chill, and enjoy! If you’re into pumpkin yogurt, you can stir the leftover pumpkin puree/spice mixture into some plain yogurt. Heavenly! I’ve made this in years past but this is my first go-round this year, and I just discovered the yogurt trick. It’s nice!

Normally, when I use flavored creamers I just like them with plain coffee. But we’ve recently discovered that this creamer with Apple Crisp Coffee from Paramount Coffee is incredible! [No affiliation, we just buy and love their coffee! It’s available online and sometimes TJ Maxx.] And why wouldn’t it be? Apple and pumpkin are the flavors of fall, right? I think this creamer would be tasty with almost any seasonal spiced coffee, or even with hot chocolate or chai. Mmm, the possibilities! Enjoy!

Homemade Pumpkin Spice Coffee Creamer

  • Servings: 2 cups/16 ounces
  • Print

Ingredients:

  • 1 cup whole milk*
  • 1 cup heavy cream*
  • 3 tablespoons pumpkin puree
  • 1 1/2 teaspoons pumpkin pie spice
  • 4 tablespoons maple syrup
  • 1 cinnamon stick, optional
  • a few whole cloves, optional
  • 1 teaspoon vanilla extract

Directions:

Whisk milk, cream, pumpkin, pumpkin pie spice, and maple syrup together in a saucepan. Add the cinnamon stick and cloves, if using. Set over medium heat. Reduce heat to low when it gets steamy, then let it simmer for 15 minutes. Remove from heat and stir in the vanilla. Use a fine sieve or a coffee filter set over a colander to strain out the cinnamon stick, cloves, and pumpkin puree/spices. Don’t skip this step! I usually strain everything in my sieve into a measuring cup, then pour the mixture into a jar or pitcher for storing in the fridge.

*I have also made this using all half and half, and while it might not be traditional “creamer” it is still really good! Use what you prefer. 🙂

Mystery Dish: Kale Salad with Sesame-Lime Dressing

Welcome to another edition of Mystery Dish! This month, Zainab from Blahnik Baker was our host and she gave us a fabulous list to make one great dish with, including: sesame seeds, green chiles, green tea/matcha powder, cardamom, ginger, feta, lamb, pinto beans, white wine, prickly pear cactus, and apples. We were supposed to use three ingredients, and I immediately thought of a few directions I could go: an apple dessert, a Mexican dish, or something Asian-y. To me, making an apple dessert [which I’d make anyway countless times this fall] was the easy way out. So was Mexican. That left Asian. What to make, what to make. OH! Sesame. I had sesame seeds and sesame oil… and somehow made an awesome awesome kale salad that has been a constant in our fridge for the past three weeks. Seriously!

I would say that the dressing in all its nutty sesame, citrusy tart lime, intense fresh ginger, and salty soy is the best part of the salad. But then I’d be doing a disservice to the crunchy toasted sesame seeds [I used white AND black] and the dried sweet apples. That’d be so sad. This salad keeps well in the fridge over the course of the week. The dressing softens the kale more and more over time, and is just so fragrant and flavorful! One might think that if you’re making the salad ahead of time it would be better to add the sesame seeds and dried apples just before serving. But surprisingly the sesame seeds stay nice ‘n crisp, and the apples take on a great salty-sweet flavor once they’ve bathed in the dressing for a day or so. Obviously the ultimate choice is up to you–assuming the salad lasts long enough for leftovers–but I highly recommend just tossing it all together and enjoying dish after dish in your lunch all week long.

Kale Salad with Sesame-Lime Dressing

  • Servings: 8

Ingredients:

  • 1 bunch kale
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon sesame oil
  • juice of 1 lime [approximately 1/4 cup]
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons maple syrup
  • 1 1/2 teaspoons fresh ginger, grated
  • 1/2 cup dried apples, chopped
  • 2 tablespoons sesame seeds

Directions:

Wash kale, then remove thick stems and thinly slice leaves into ribbons. Dry with a salad spinner or a kitchen towel. Place in a large bowl.

In a measuring cup, combine extra virgin olive oil, sesame oil, lime juice, vinegar, soy sauce, maple syrup, and ginger. Whisk to combine, then pour half the dressing over the kale. Toss together with salad tongs or your hands, and add as much of the remaining dressing as desired. For extra tender kale, massage dressing into the kale with your hands for a few minutes. Allow salad to rest for at least 10 minutes before serving to soften. Top with chopped apples.

Place sesame seeds in a cold skillet. Set on stovetop over medium heat, and toast for 3-5 minutes or until lightly browned, stirring often. Add sesame seeds to kale salad before serving.

SRC: Chocolate Baked Oatmeal

Hi friends! It’s another SRC day. Every month I am always SHOCKED at how quickly it’s SRC time again. It means time is passing quickly… both for blog stuff and real life stuff. My first full semester working as a librarian has already come to an end, and we’ve been living in Nashville over 7 months now! Crazy stuff. But you know what isn’t crazy? How wonderful my Secret Recipe Club assignment for May was. [Betcha didn’t see that transition coming, now did ya? :)]

This month I was assigned to Food Ramblings, written by the lovely Elizabeth. She has tons of recipes on her blog, ranging from the indulgent to the uber healthy. My kinda girl! That’s exactly  how I cook, so I had SUCH a hard time deciding what to make. As I was browsing through her archives basically everything sounded good to me. Maybe I was just hungry. 🙂 First, I really wanted to make this polenta with roasted tomatoes and spinach, I decided to wait until the summer for that–I’m sure it’ll be unbelievably delicious with fresh farmer’s market tomatoes. Then, I thought about making cheese and broccoli quinoa casserole, and finally landed on Chocolate Baked Oatmeal. It was only when I was writing this post that I realized it fell on Cinco de Mayo and I should have made something Mexican. Oh well, it was delicious. Though the baked oatmeal tasted rich and fudgy, it’s actually a pretty healthy breakfast. Well, as far as having chocolate for breakfast can be considered healthy. 🙂

Elizabeth’s original recipe called for making this baked oatmeal in muffin cups, which is SUCH a good idea. So why didn’t I do that? Ben. I asked his opinion and he thought it would be easier to just make a big pan of it. So that’s what I did. I also was nearly out of regular size muffin liners, and I never have luck greasing my muffin tin. She also used strawberries and peanut butter chips in her baked oatmeal, neither of which I had. So I used bananas and cinnamon chips and OH MY GOODNESS was that an awesome combination. I usually am not a banana oatmeal kinda girl but you can’t even taste it in this, especially if you mash up the banana really well. The cinnamon chips just add SO much flavor and little bursts of sweet cinnamon goodness. Later in the summer you can bet I’ll try that chocolate, strawberry, and peanut butter combination though… it sounds incredible, like a jacked up peanut butter and jelly sandwich.

Before this, I was a newbie to chocolate baked oatmeal–usually I just make this plain version from my summer camp counselor days, and add my own toppings, but from now on I will be tempted to make this delightful chocolate version. Chocolate Baked Oatmeal [adapted from Food Ramblings]

Ingredients:

  • 2 cups old fashioned oats
  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 cup milk [I used skim]
  • 1 large egg
  • 2 medium bananas, mashed
  • 1/2 cup pure maple syrup
  • 1/4 cup cinnamon chips, divided

Directions:

Preheat oven to 375 degrees. Grease a 9 inch pie pan with cooking spray, or line a 12 cup muffin tin with paper liners.

In a large bowl, stir together oats, flour, cocoa powder, and baking powder. In a separate bowl, whisk together milk, egg, bananas, and maple syrup. Fold wet ingredients into the dry ingredients, then stir in half of the cinnamon chips. Transfer batter to prepared pan and top with remaining cinnamon chips.

Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. [If baking in a muffin tin, bake for 20-25 minutes]. Serve warm, adding milk or yogurt if desired.

Time: 45 minutes.
Yield: 6 servings.

SRC: Baked Strawberry French Toast with Strawberry Maple Syrup

This month for the Secret Recipe Club I had the honor of being assigned to Jane’s blog, The Heritage Cook. Jane does so much for the SRC every month, including serving as the hostess of our group [group A, that always posts on the first Monday of the month] so I definitely wanted to do a good job with her blog. 🙂 Jane lives in California and has been into cooking and baking forever–ever since her Easy Bake Oven. How fun! She has tons of great recipes on her site, including lots of chocolate recipes from her Chocolate Mondays posts. So if you need a chocolate recipe, like puddingpeanut butter-chocolate cookie dip, or cake, Jane is your girl! 🙂 But I didn’t make a chocolate recipe today. I made baked french toast. And it is delicious!

This was one of the last, if not the last meal we made in our old apartment. TEAR! Ha. But I digress… this baked french toast is soft, sweet, super simple to put together. You can mix everything together the night before you want to serve it, and then just bake it up in about 30 minutes in the morning. We topped ours with walnuts and strawberries, and then an absolutely epic strawberry maple syrup. Jane is a genius, I tell ya!

And it was excellent. I wished I had an orange to grate in some zest–that would have made a great dish even better. The moral of the story is that you can use any fruit and any nut you’d like, and you can have a great, company worthy breakfast in a jiffy. Thanks, Jane! Enjoy! 🙂

Baked Strawberry French Toast with Strawberry Maple Syrup [adapted from The Heritage Cook]

Ingredients:

for french toast

  • 1 loaf Italian bread, cut into 1-2 inch cubes
  • 8 eggs
  • 2 cups milk
  • 3/4 cup brown sugar, divided
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts, lightly toasted
  • 2 cups strawberries, fresh or frozen

for syrup

  • 1 1/2 cups real maple syrup
  • 1 1/2 cups strawberries, fresh or frozen

Directions:

Spread bread crumbs on the bottom of a 9×13 inch baking dish. In a large bowl, whisk together eggs, milk, 1/2 cup brown sugar, and vanilla. Pour over bread, then cover and refrigerate overnight. It will appear to be very liquidy–that’s okay.

In the morning, top with remaining brown sugar, walnuts, and strawberries. Bake in a preheated 350 degree oven for 30 minutes or until brown and bubbly.

While french toast is baking, combine maple syrup and strawberries in a small saucepan and heat on low until warm. Gently press berries with a wooden spoon to break up.

Cut french toast into squares and serve with strawberry maple syrup.

Time: 1 hour + overnight.

Yield: 12 servings.

Mystery Dish: Maple Apple Pie-Crisp with Cheddar Crust & Bacon Crumb Topping

This month I’m participating in a new, fun challenge with twelve new and old blogging friends [well, this month it’s eleven but still!] It’s called Mystery Dish, and the premise is this: each month, one blogger will create a mystery box of ingredients. Ingredients can be themed related to a cuisine, a meal, a season, a specific ingredient, or anything else creative. Then, the other eleven bloggers have to create a recipe using some of the ingredients. SO FUN!

This month, the ingredients we had to work with included the following:

Peanut Butter

Of course, I like to make things difficult for myself and even though I knew this post would be live right around the date of our move [yes, we are in NASHVILLE now!], I wanted to include as many ingredients as possible, and managed to make a delicious dessert utilizing all ingredients but one. Peanut butter sadly was excluded, but all the others make an appearance in this fabulous pie-crisp!

What is a pie-crisp, you may ask? Well, it’s something that was intended to be a pie but fell apart and as such, resembled more of a crisp than anything. No matter what you call it, Maple Apple Pie-Crisp with Cheddar Crust & Bacon Crumb Topping should be called delicious because that is exactly what it is.

Let’s go through this fabulous dessert, shall we? It starts with a crust studded with shredded cheddar cheese. For appearance, I’d recommend using white cheddar, but since I wanted to use things up before the move, I just used a basic sharp cheddar. The filling is apples [Gala + Macintosh, but tart would be good next time too] sweetened with maple syrup and warm cinnamon, allspice, cloves, and vanilla. Simple, perfect, wonderful. I think I’m in love with maple apples now, and might try that in my next batch of applesauce.

Lastly, this pie-crisp is finished off with an oat-based crumb topping. Ben’s addition to the recipe [I say addition, but he actually made the crust himself while I lay miserable on the couch with a cold–go Ben!] was to cook up some bacon rubbed with brown sugar which he then crumbled on the pie as it cooled. The salty-sweet bacon was the perfect, surprising finishing effect to each bite of warm apple pie-crisp. This is a dessert I can’t wait to make again and again!

Maple Apple Pie-Crisp with Cheddar Crust & Bacon Crumb Topping [crust from Martha Stewart]

Ingredients:

for Cheddar Pie Crust

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 sticks cold unsalted butter, cut into small pieces
  • 1/4 cup ice water
  • 1/2 cup shredded sharp cheddar cheese

for Maple Apple Pie Filling

  • 8 cups apples, thinly sliced [peel or not–your choice]
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon allspice

for Bacon Crumb Topping

  • 2 slices bacon
  • 1/2 cup oats
  • 1/4 cup brown sugar + more for bacon
  • 1/4 cup flour
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cloves
  • 3 tablespoons butter

Directions:

First, prepare pie crust. Pulse together flour and salt in a food processor several times, then gradually add butter, pulsing in between additions. Pour in water tablespoon by tablespoon until mixture begins to hold together–it shouldn’t be wet/sticky. Add cheese, pulse until combined. Add more water if dough is dry, then turn out onto clean countertop. Shape into a disk, then wrap in plastic and refrigerate at least an hour or better, overnight.

When ready to make pie, preheat oven to 425 degrees. Remove pie dough from refrigerator and rest at room temperature for 10 minutes.

To make filling, toss together apple slices, maple syrup, vanilla, cinnamon, cloves, and allspice. Set aside.

Roll out pie crust on floured surface, then press into a 10 inch pie pan. Fill with maple apple filling, then prepare crumb topping.

Toss together oats, brown sugar, flour, cinnamon, allspice, and cloves. Cut in butter with pastry blender, then sprinkle evenly on top of pie.

Bake at 425 for 15 minutes, then reduce heat to 350 and bake for an additional 30 minutes or until golden brown and bubbly.

After temperature is reduced, place bacon on a foil-lined baking sheet and rub with brown sugar. Place in oven and bake for 15-20 minutes or until fully cooked. Remove and degrease, then crumbled over pie before serving.

Time: 3 hours or more [including time to chill dough].

Yield: 8 servings.
